There are some dinners that donโt need to be fancy to feel special. This Classic Ground Beef Casserole is one of those meals for me. Itโs warm, cheesy, creamy, beefy, and honestly, a little old-school in the best way. The kind of dinner that makes the kitchen smell like someone has their life together, even if thereโs laundry sitting in the dryer and the sink is already judging you. Sound familiar?
I first made a version of this Classic Ground Beef Casserole on a weeknight when I had zero interest in making anything complicated. It was one of those evenings where everyone was hungry, the day felt too long, and I was standing in front of the fridge doing that little stare-down we all do. Ground beef? Check. Pasta? Somewhere in the pantry. Cheese? Thankfully, yes. Sour cream? Half a container, but enough. Thatโs how this cozy easy ground beef casserole kind of came together โ not from some grand dinner plan, but from real-life kitchen scrambling.
And you know what? Thatโs part of why I love it. This cheesy beef pasta casserole doesnโt pretend to be elegant. Itโs not the kind of dish you serve with tiny tweezers and a dramatic garnish. Itโs a scoop-it-big, pass-the-garlic-bread, โwho wants seconds?โ kind of meal. The ground beef gives it that hearty dinner feeling, the tomato sauce and beef broth make everything savory and saucy, the sour cream softens it into something creamy, and then the cheese melts over the top like a cozy little blanket. A delicious blanket. Maybe thatโs a weird image, but it fits.
Thereโs also something nostalgic about this family-friendly casserole. It reminds me of potluck tables, church suppers, school-night dinners, and those big baking dishes that always seem to come out when people need feeding, not impressing. You know the kind โ someone sets down a casserole, says, โItโs just simple,โ and then everyone goes back for more. Iโve always had a soft spot for recipes like that. Theyโre humble, but they work.
This ground beef noodle casserole is also the kind of recipe that makes sense when grocery prices feel a little wild. It stretches 1 lb of ground beef into a full meal for about 6 servings, and it uses ingredients you might already have on hand: pasta, tomato sauce, broth, sour cream, and shredded cheese. It feels hearty without feeling expensive, which is a win in my book. I mean, comfort food that doesnโt require a cart full of specialty ingredients? Yes, please.
I also like that this Classic Ground Beef Casserole is flexible. You can use elbows, rotini, shells, penne, or whatever short pasta is hanging around in the pantry. You can add vegetables if youโre feeling responsible. You can make it spicy if your family likes a little heat. You can even use cooked potatoes instead of pasta, which gives it a totally different but still cozy vibe. Itโs forgiving, and I appreciate a forgiving dinner.
What really gets me, though, is that bubbly cheese topping. I know, I know โ melted cheese is not exactly a groundbreaking discovery. But thereโs something about cheddar and mozzarella melting together over a creamy beef casserole that just makes dinner feel done. Like, we made it. We survived the day. Here is a warm plate of food. Sometimes thatโs enough.
So if youโre looking for a simple, hearty, cozy dinner that tastes like comfort and doesnโt ask you to do too much, this Classic Ground Beef Casserole is such a good one to keep nearby. Itโs easy, budget-friendly, and family-friendly, and it has that dependable casserole charm that never really goes out of style.

Why youโll Love this Classic Ground Beef Casserole?
Youโll love this Classic Ground Beef Casserole because itโs the kind of dinner that feels steady and comforting. Itโs made with ground beef, pasta, tomato sauce, beef broth, sour cream, and plenty of cheese, so itโs hearty without being complicated. Some meals try to do too much. This one just says, โIโve got dinner covered,โ and honestly, I respect that.
This easy ground beef casserole is especially helpful on busy weeknights. The prep takes about 15 minutes, and then the oven finishes everything off. You brown the beef, stir together the sauce, fold in the pasta, top it with cheese, and bake until bubbly. Thatโs it. No complicated sauce-making. No tiny steps that make you wonder why you started cooking in the first place. Just a practical, cozy dinner that works.
The flavor is simple but satisfying. The onion and garlic make a savory base, the tomato sauce adds richness, the beef broth gives the sauce more depth, and the Italian seasoning brings in that familiar pasta-bake flavor. Then the sour cream makes everything creamy and smooth. I wouldnโt call it fancy, but I would call it very comforting. And sometimes comforting beats fancy by a mile.
The cheese topping is another reason this cheesy beef pasta casserole is so good. Cheddar gives it bold flavor, while mozzarella adds that melty, stretchy finish. When the casserole comes out of the oven with the cheese bubbling on top, it has that โcome get dinner before I eat from the panโ energy. Do you agree that melted cheese has a strange amount of power over people?
This family-friendly casserole also makes about 6 servings, which is great for a family dinner, meal prep, or leftovers the next day. And I have to say, Iโm a leftovers person. Not every casserole reheats beautifully, but this one does a pretty good job if you add a little splash of broth or sauce before warming it up. Future-you will be grateful.
Another thing I like is how flexible this ground beef noodle casserole is. You can change the pasta, swap the cheese, add vegetables, or use ground turkey instead of beef. Itโs not fragile. It doesnโt fall apart if you make a few real-life substitutions. Thatโs important because, letโs be honest, most of us are not running a restaurant kitchen. Weโre cooking dinner with what we have.
And maybe most of all, this Classic Ground Beef Casserole just feels like a meal people actually want to eat. Itโs warm, filling, creamy, cheesy, and easy to scoop onto a plate. Itโs the kind of dinner that brings people to the table without needing much convincing.

Ingredient Notes
The ingredients in this Classic Ground Beef Casserole are simple, familiar, and easy to find. Nothing too precious here. The ground beef makes it hearty, the pasta makes it filling, the tomato sauce and broth bring flavor, the sour cream makes it creamy, and the cheddar and mozzarella give you that bubbly, melty casserole top everyone secretly wants. Or not so secretly.
- Ground Beef: Ground beef is the heart of this easy ground beef casserole. Youโll use 1 lb / 450 g, which is enough to make the casserole hearty without taking over the whole dish. Cook it until browned, breaking it apart as it cooks, then drain off extra grease if needed. I usually prefer lean ground beef here, but Iโm not overly strict about it. Use what you have. If the beef has a little more fat, just drain it well so the casserole stays rich instead of oily.
- Onion: A diced medium onion adds sweetness and a little depth to this Classic Ground Beef Casserole. Cooking it in olive oil for a few minutes before adding the beef helps soften it and mellow the flavor. Iโve skipped onion-softening steps before when I was in a rush, and honestly, you can tell. Raw-ish onion has a way of announcing itself. Let it soften first and it blends right into the sauce.
- Garlic: Garlic adds that warm, savory flavor that makes this cheesy beef pasta casserole taste more complete. Add it after the beef is browned so it doesnโt burn. Garlic cooks fast, and burnt garlic can make the sauce taste bitter. Two cloves are enough for good flavor, though if youโre a garlic person, I understand if your hand gets a little generous. It happens.
- Tomato Sauce: Tomato sauce gives this ground beef noodle casserole its saucy base. It mixes with the beef broth, seasonings, and sour cream to create a creamy tomato-beef sauce that coats the pasta. I like plain tomato sauce here because it keeps the recipe classic and simple. A mild pasta sauce can work too, but the flavor may be a little sweeter or more seasoned depending on the brand.
- Beef Broth: Beef broth adds savory depth and helps loosen the sauce so the pasta stays moist. It makes the casserole taste more flavorful than using water. If you only have low-sodium broth, thatโs totally fine; just taste and adjust the salt. Broth is one of those quiet ingredients that doesnโt get much attention, but it really helps the whole dish taste cozier.
- Salt and Black Pepper: Salt and black pepper are simple, but they matter. This recipe uses 1 tsp salt and ยฝ tsp black pepper, though you can adjust based on your broth, cheese, and personal taste. Some cheese is salty. Some broth is salty. So tasting as you go is a good idea. Recipes are helpful, but your spoon gets the final vote.
- Italian Seasoning: Italian seasoning gives this Classic Ground Beef Casserole a cozy pasta-bake flavor without needing a bunch of separate spices. It usually has herbs like oregano, basil, thyme, and rosemary. Just 1 tsp adds enough flavor to make the sauce taste warm and familiar. Itโs simple, but it does the job nicely.
- Cooked Pasta: Cooked pasta makes this family-friendly casserole filling and easy to serve. Elbows, rotini, shells, penne, or any short pasta will work. Short pasta is best because it catches the creamy beef sauce and scoops easily. Cook the pasta just until tender, not mushy, because it will spend a little more time in the oven. Nobody wants casserole pasta that gave up completely.
- Cheddar Cheese: Cheddar cheese brings bold flavor to this cheesy beef pasta casserole. Sharp cheddar gives it a stronger taste, while mild cheddar keeps it a little softer and more kid-friendly. Either one works. I like cheddar because it makes the casserole taste classic, like something youโd expect to find bubbling away at a family dinner.
- Mozzarella Cheese: Mozzarella adds that melty, stretchy finish on top. It balances the cheddar and makes the casserole look extra inviting when it comes out of the oven. Pre-shredded mozzarella is perfectly fine for weeknight cooking, but freshly shredded mozzarella melts a bit smoother if you have the time and energy. Some nights we do. Some nights we absolutely do not.
- Sour Cream: Sour cream makes the sauce creamy and adds a gentle tang that keeps the tomato-beef mixture from feeling too heavy. Stir it in after the sauce has simmered so it blends smoothly. It gives this Classic Ground Beef Casserole that cozy creamy texture without needing a separate cream sauce. Very helpful. Very appreciated.
- Olive Oil: Olive oil helps soften the onion and gets the skillet started. You only need 1 tbsp, just enough to cook the onion before adding the beef. If your ground beef is higher in fat, you may not need much oil, but a little helps the onion cook evenly and keeps it from sticking at the beginning.
- Parsley: Chopped parsley is optional, but it adds a fresh little finish and makes the casserole look brighter. Itโs not required, and I wonโt pretend it changes the entire recipe, but it does make the top look less like one big blanket of cheese. A little green garnish can be nice, especially if youโre serving it to guests or taking a photo.

How to Make Classic Ground Beef Casserole?
Making Classic Ground Beef Casserole is straightforward and very weeknight-friendly. Youโll soften the onion, brown the ground beef, simmer it with tomato sauce and broth, stir in sour cream, fold in cooked pasta, top everything with cheese, and bake until melted and bubbly. Itโs not complicated, which is exactly why I like it.
Step 1: Preheat the oven and prepare the baking dish
Preheat your oven to 375ยฐF / 190ยฐC. Lightly grease a 9ร13-inch baking dish so the casserole doesnโt stick around the edges. This also makes cleanup easier later, and honestly, that matters. Set the dish aside while you prepare the beef and pasta mixture. The oven will be ready by the time everything is assembled.
Step 2: Cook the onion
Heat 1 tbsp olive oil in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes, stirring occasionally, until it softens. You donโt need to caramelize it or do anything fancy. Just let it become tender and fragrant. This small step helps build flavor in the base of your easy ground beef casserole.
Step 3: Brown the ground beef
Add the ground beef to the skillet with the softened onion. Cook until the beef is browned and no longer pink, breaking it apart with a spoon or spatula as it cooks. Drain any excess grease before moving on. This keeps the casserole hearty but not greasy. The beef should be crumbly, savory, and ready to soak up the sauce.
Step 4: Add garlic, sauce, broth, and seasonings
Stir in the minced garlic, tomato sauce, beef broth, salt, black pepper, and Italian seasoning. Mix everything together until the beef is coated in sauce. Let it simmer for about 5 minutes. This short simmer helps the flavors come together, and the sauce starts to feel more like something cozy rather than just ingredients in a pan. Tiny transformation, but important.
Step 5: Stir in the sour cream
Add the sour cream and stir until the sauce becomes creamy and smooth. This is where the cheesy beef pasta casserole starts to feel extra comforting. The sour cream softens the tomato flavor and gives the sauce a rich texture. Keep the heat moderate and stir well so it blends evenly. You want creamy, not separated or lumpy.
Step 6: Fold in the cooked pasta
Add the cooked pasta to the skillet and gently fold until everything is well coated in the creamy beef sauce. Make sure the pasta is mixed evenly so every scoop has beef, sauce, and noodles. If it looks a little too thick, add a small splash of beef broth or tomato sauce. Pasta likes to drink up sauce, so donโt be afraid to adjust a bit.
Step 7: Transfer to the baking dish
Spoon the beef and pasta mixture into the prepared 9ร13-inch baking dish. Spread it into an even layer so it bakes consistently. At this point, it already looks like dinner, but the cheese topping is about to make it feel like a proper casserole. You know, the kind people actually get excited about.
Step 8: Add the cheese topping
Sprinkle the shredded cheddar cheese and shredded mozzarella cheese evenly over the top. Try to cover the casserole well so every serving gets melted cheese. Cheddar gives flavor, mozzarella gives meltiness, and together they make this Classic Ground Beef Casserole look very hard to resist. This is the moment when people start hovering.
Step 9: Bake until melted and bubbling
Bake the casserole for 15 to 18 minutes, or until the cheese is melted and bubbling. The filling is already cooked, so the oven is mostly heating everything through and melting the cheese. If you want the top a little more golden, you can broil it briefly, but watch it closely. Cheese has a tiny window between golden and โwell, that happened.โ
Step 10: Rest and serve
Remove the casserole from the oven and let it rest for 5 minutes before serving. This helps the sauce settle and makes it easier to scoop. Garnish with chopped parsley if desired, then serve warm. This Classic Ground Beef Casserole is best when itโs hot, cheesy, and served in big cozy spoonfuls.
Storage Options
Classic Ground Beef Casserole stores well, which makes it a very practical dinner for leftovers, meal prep, and busy weeks. Since it has pasta, beef, sauce, sour cream, and cheese, the main thing is to keep it covered so it stays moist and reheats nicely. Pasta tends to soak up sauce as it sits, so a little extra moisture during reheating can really help.
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Let the casserole cool before storing, but donโt leave it out too long. You can store it in one larger container or divide it into individual portions for quick lunches. I love portioning leftovers because future me is always relieved when lunch is already handled.
To reheat a single serving, microwave it until hot, stirring halfway through if possible. If reheating a larger amount, cover the baking dish with foil and warm it in a 350ยฐF / 175ยฐC oven until heated through. If the casserole looks dry, add a small splash of beef broth, tomato sauce, or even water before reheating. It brings the sauce back a little, like a tiny casserole refresh.
You can freeze this ground beef noodle casserole for up to 2 months, though Iโll be honest โ pasta and sour cream sauce can change texture slightly after freezing. It still tastes cozy and good, but it may be a little softer once thawed. Let the casserole cool completely, then wrap it tightly or store portions in freezer-safe containers. Thaw overnight in the refrigerator before reheating.
For make-ahead prep, assemble this easy ground beef casserole up to the baking step, cover it tightly, and refrigerate it for up to 24 hours. When youโre ready to bake, let it sit at room temperature for about 20 minutes while the oven preheats. If it goes into the oven cold, it may need a few extra minutes to get hot and bubbly.
If you want the best leftover texture, try not to overbake the casserole the first time. The pasta and cheese will heat again later, so keeping the first bake just right helps prevent dry leftovers. I know leftovers arenโt always glamorous, but this Classic Ground Beef Casserole can absolutely make a good next-day lunch.
Variations & Substitutions
This Classic Ground Beef Casserole is easy to customize, which is one of the reasons I keep coming back to recipes like this. You can switch the pasta, add vegetables, change the cheese, use a different protein, or make it spicy. Itโs a flexible casserole, and flexible dinners are a blessing when the fridge is looking a little random.
- Use a Different Pasta: Elbows, rotini, shells, penne, bowties, or any short pasta work well in this cheesy beef pasta casserole. Short pasta shapes are best because they hold the sauce and scoop easily. Cook the pasta until just tender before mixing it into the beef sauce. Try not to overcook it, because it will soften a little more in the oven. Mushy pasta is not the goal. Cozy pasta, yes. Mushy, no.
- Use Potatoes Instead of Pasta: You can use cooked diced potatoes or thinly sliced cooked potatoes instead of pasta. This turns the recipe into more of a beef and potato casserole, which is hearty and especially nice on colder nights. Just make sure the potatoes are already cooked before you add them, because the baking time is short and wonโt be enough to cook raw potatoes through.
- Swap the Ground Beef: Ground turkey, ground chicken, or ground pork can be used instead of beef. Turkey and chicken make the casserole a little lighter, while pork adds richness. If you use leaner meat, add a little extra seasoning or a splash more broth so the casserole still has plenty of flavor. This family-friendly casserole can handle the swap without much fuss.
- Add Vegetables: Add cooked peas, corn, mushrooms, bell peppers, spinach, zucchini, or carrots if you want more color and texture. This is a good way to sneak in vegetables without making dinner feel too โvegetable-y,โ if that makes sense. If using vegetables with a lot of water, like zucchini or mushrooms, cook them first so they donโt make the casserole watery. Nobody invited soup casserole.
- Make It Spicy: Add red pepper flakes, chili powder, diced jalapeรฑos, cayenne, or hot sauce if you like heat. This easy ground beef casserole is mild as written, which makes it great for families, but it can definitely handle a spicy little upgrade. Start small, taste, and adjust. You can also keep the casserole mild and put hot sauce on the table for the brave ones.
- Change the Cheese: Cheddar and mozzarella are a classic combo, but Monterey Jack, Colby Jack, provolone, pepper jack, or an Italian cheese blend can all work. Pepper jack adds heat, provolone melts smoothly, and Colby Jack keeps things mild and creamy. Use what you have or what your family already loves. Cheese is one of the most forgiving parts of a casserole.
- Use Greek Yogurt Instead of Sour Cream: Plain Greek yogurt can be used instead of sour cream if you want a slightly lighter option. Full-fat or 2% Greek yogurt works best because it stays creamier. Add it off the heat or over low heat so it blends smoothly. The flavor will be a little tangier, but still delicious.
- Make It Extra Saucy: If you prefer a saucier ground beef noodle casserole, add a little extra beef broth or tomato sauce before folding in the pasta. Pasta absorbs liquid as it bakes and sits, so extra sauce can help keep the casserole moist. Just donโt add too much or it may become loose. Thereโs a sweet spot between creamy and soupy.
- Add a Crunchy Topping: Sprinkle crushed crackers, breadcrumbs, fried onions, or even crushed potato chips over the cheese before baking if you want crunch. Toss breadcrumbs with a little melted butter for extra flavor. A crunchy topping gives this Classic Ground Beef Casserole a little texture contrast, which can be really nice against the creamy filling.
- Make It Ahead: You can assemble the casserole ahead and bake it later, which is a lifesaver on busy days. Prepare everything, cover the dish, and refrigerate until ready to bake. Add a few extra minutes if it goes into the oven cold. Itโs one of those small prep-ahead moves that can make dinnertime feel less chaotic.

What to Serve With Classic Ground Beef Casserole?
Classic Ground Beef Casserole is hearty enough to be the main dish, but a simple side can make the meal feel more complete. Since the casserole is creamy, cheesy, and filling, I like serving it with something fresh, crisp, or a little lighter. But I will never say no to bread with a saucy casserole. That would just be wrong.
- Green Salad: A simple green salad is one of the easiest sides for this Classic Ground Beef Casserole. The crisp lettuce and fresh vegetables balance the creamy beef and pasta. Add cucumbers, tomatoes, carrots, or whatever is in your fridge. You donโt need anything complicated. Just something fresh next to all that cozy cheese.
- Garlic Bread: Garlic bread and cheesy beef pasta casserole are basically best friends. The bread is perfect for scooping up extra sauce and melted cheese from the plate. Homemade garlic bread is great, but frozen garlic bread is absolutely allowed. Some nights, shortcuts are not only fine โ they are the reason dinner happens.
- Roasted Vegetables: Roasted broccoli, carrots, zucchini, green beans, or Brussels sprouts pair nicely with this easy ground beef casserole. The roasted flavor adds a little depth, and the vegetables help balance the richness of the dish. Plus, roasting vegetables is mostly hands-off, which is helpful while the casserole is baking.
- Steamed Green Beans: Steamed green beans are simple, fresh, and quick. Add a little butter, salt, pepper, and lemon juice if you like. They add color to the plate and keep the meal from feeling too heavy. Sometimes a very simple side is exactly what a rich casserole needs.
- Caesar Salad: Caesar salad works well because the crisp romaine and tangy dressing cut through the creamy casserole. Itโs still a little rich, but fresh enough to balance the meal. Add croutons if you want crunch, or skip them if youโre keeping things simple. Either way, Caesar salad has that dependable dinner-side energy.
- Dinner Rolls: Soft dinner rolls are perfect with this family-friendly casserole. They soak up the creamy tomato sauce and melted cheese beautifully. Warm rolls with butter make the meal feel extra cozy, especially when everyone is hungry and waiting at the table like dinner is a major event.
- Corn on the Cob: Corn on the cob adds sweetness and color beside the savory beef casserole. Itโs great in summer, but frozen or canned corn works just fine when you need something quick. This Classic Ground Beef Casserole doesnโt need fancy sides. Simple works.
- Coleslaw: Coleslaw adds crunch and freshness, which is really nice beside a warm, cheesy casserole. A vinegar-based slaw feels lighter, while creamy slaw keeps the meal more classic. Both work. I like the contrast, especially when the casserole is extra rich.
- Pickles or Pickled Vegetables: This might sound a little unexpected, but pickles or pickled vegetables are great with rich casseroles. The tang cuts through the creamy sauce and cheese. If you like pickles with burgers or beefy dinners, you might love this pairing too. Ever tried something similar?
- Fruit Salad: Fruit salad adds a fresh, sweet side to this ground beef noodle casserole. Grapes, apples, oranges, berries, or melon all work. Itโs especially nice for a casual family dinner because it adds brightness without needing another cooked dish. And sometimes one less pan is the real gift.
FAQ
Can I use uncooked pasta in this casserole?
I recommend using cooked pasta for this easy ground beef casserole. The casserole only bakes for 15 to 18 minutes, which is not long enough to cook dry pasta properly. Cook the pasta first until just tender, then fold it into the sauce. That way, the pasta is soft, coated, and ready to bake without stealing all the liquid from the casserole.
How do I keep the casserole from drying out?
To keep this ground beef noodle casserole moist, make sure the pasta is well coated in sauce before baking and avoid overbaking it. If the mixture looks too thick before it goes into the baking dish, add a small splash of beef broth or tomato sauce. When reheating leftovers, add a little broth, water, or sauce to bring back moisture.
Can I make this casserole spicy?
Yes, you can make this Classic Ground Beef Casserole spicy by adding red pepper flakes, hot sauce, chili powder, cayenne, or diced jalapeรฑos. Start with a small amount and add more to taste. If youโre feeding people with different spice preferences, keep the casserole mild and serve hot sauce on the side. Peace at the dinner table matters.
Can I make this with ground turkey instead of ground beef?
Yes, ground turkey works well as a lighter swap. Since turkey is leaner than beef, you may want to add a little extra seasoning or broth so the casserole still tastes rich and savory. Ground chicken can also work. It wonโt taste exactly the same as a Classic Ground Beef Casserole, of course, but it will still be creamy, cheesy, and satisfying.

This Classic Ground Beef Casserole is cozy, cheesy, hearty, and exactly the kind of dinner I reach for when life feels busy but I still want something homemade. It uses simple ingredients, comes together without much fuss, and bakes into a warm, satisfying meal that feels like comfort food in its most dependable form.
I love that this recipe can handle real-life cooking. Maybe you use rotini instead of elbows. Maybe you add corn because thereโs half a bag in the freezer. Maybe you use cheddar only because the mozzarella mysteriously disappeared. Itโs okay. This easy ground beef casserole is flexible, forgiving, and still delicious.
Try this Classic Ground Beef Casserole the next time you need a cheesy beef pasta bake, a ground beef noodle casserole, or a family-friendly weeknight dinner that everyone can scoop onto their plate happily. And tell me โ are you serving it with garlic bread, salad, or both? Canโt wait to hear what you think!
