You know those nights when a takeout craving hits with absolutely no warning? One minute youโ€™re fine, and the next youโ€™re thinking about saucy shrimp, hot rice, crisp vegetables, and whether itโ€™s socially acceptable to call that dinner plan โ€œself-care.โ€ Thatโ€™s pretty much how this Copycat Panda Express Sizzling Shrimp became a regular in my kitchen. I wanted something fast, colorful, and full of that sweet-spicy takeout flavor, but I didnโ€™t want to leave the house or wait for delivery while repeatedly checking the app like it owed me emotional support. Sound familiar?

The first time I made this Panda Express copycat shrimp, I was having one of those busy weekday evenings where dinner felt like an interruption. I had shrimp in the freezer, a red bell pepper that needed to be used, and sugar snap peas I bought earlier in the week with very responsible grocery-store confidence. You know the kind. You toss vegetables into the cart like youโ€™re suddenly becoming a meal-prep person, and then they sit in the fridge quietly waiting to see if you meant it. So I thawed the shrimp, chopped the veggies, whisked together the sauce, and hoped it would scratch that takeout itch.

And honestly? It did. This Copycat Panda Express Sizzling Shrimp came together so quickly that I almost didnโ€™t trust it. The shrimp cooked in just a few minutes, the vegetables stayed bright and crisp, and the sauce turned glossy in the pan like it knew it was the main character. I stood there with the spoon, โ€œjust tasting,โ€ which somehow turned into two or three extra tastes. For quality control, obviously. Very serious work.

What I love most about this wok-fired shrimp recipe is that it feels fun without being fussy. You donโ€™t need a restaurant wok station or a dramatic flame leaping toward the ceiling. A large skillet works just fine, and thank goodness, because my kitchen is not built for theatrical fire. The trick is simply to cook everything hot and fast. The shrimp should be tender, the red bell pepper should still have a little bite, and the sugar snap peas should stay crisp enough to remind you they were once ambitious vegetables.

The sauce is where this sweet and spicy shrimp stir fry really gets its personality. Low-sodium soy sauce brings the salty-savory base, rice vinegar adds brightness, chili paste gives it a little heat, oyster sauce adds that rich takeout-style depth, and brown sugar rounds everything out with sweetness. Then the cornstarch helps it thicken into that glossy coating that clings to the shrimp and vegetables. Itโ€™s not complicated, but it tastes like more than the sum of its parts. Kind of like when you put on earrings and suddenly your whole outfit looks intentional.

I also like that this Copycat Panda Express Sizzling Shrimp lets you control the heat. Some nights I want just a gentle little kick. Other nights, I want the chili paste to show up with confidence. You can make it mild, spicy, extra saucy, loaded with veggies, or served over whatever you have on hand. Rice is classic, noodles are cozy, and cauliflower rice works when you want something lighter. No judgment here. Dinner should fit your mood.

So if youโ€™re craving a fast, saucy, takeout-style meal but still want to cook at home, this Copycat Panda Express Sizzling Shrimp is such a good one to try. Itโ€™s colorful, quick, sweet, spicy, and just a little dramatic in the best way. Basically, weeknight dinner with a tiny bit of sparkle.

Why youโ€™ll Love this Copycat Panda Express Sizzling Shrimp?

Youโ€™ll love this Copycat Panda Express Sizzling Shrimp because it comes together in about 15 minutes, which feels almost suspiciously fast for something this flavorful. Shrimp is one of my favorite proteins for busy nights because it cooks so quickly, but it still feels special. Add crisp vegetables and a glossy sweet-spicy sauce, and suddenly youโ€™ve got dinner that looks like you put in way more effort than you did. I always appreciate a recipe that lets me look organized when I am, in fact, very much winging it.

This easy shrimp stir fry also has that takeout-inspired flavor without making you leave the house. The sauce is sweet, savory, tangy, and spicy enough to keep things interesting. It uses soy sauce, rice vinegar, chili paste, oyster sauce, brown sugar, garlic, cornstarch, and water to create a thick sauce that coats every bite. Itโ€™s bold but not complicated. And honestly, thatโ€™s the sweet spot for weeknight cooking, isnโ€™t it?

Another reason this Panda Express copycat recipe works so well is the texture. You get juicy shrimp, crisp sugar snap peas, sweet red bell pepper, and softened onion all tossed in sauce. That combination makes every bite feel a little different. Some dinners are just soft-on-soft-on-soft, and while Iโ€™m not judging, I do love a little crunch. This dish gives you color, texture, heat, sweetness, and sauce all in one skillet.

This Copycat Panda Express Sizzling Shrimp is also flexible in a very real-life way. You can add more chili paste if you want heat, use less if youโ€™re cooking for someone who thinks black pepper is โ€œspicy,โ€ swap in broccoli or zucchini, or serve it over rice, noodles, or cauliflower rice. I like recipes that leave room for whatever is already sitting in the fridge. Because sometimes the fridge has plans, and we just have to work with them.

Itโ€™s also a nice homemade alternative when you want something lighter than takeout but still full of flavor. You control the amount of oil, sauce, spice, and vegetables. You can add extra shrimp if you want it heartier, or extra vegetables if youโ€™re trying to make good on those grocery-store promises. And no one charges you for extra veggies at home, which feels like a tiny but meaningful victory.

Most of all, this sizzling shrimp recipe is just fun to make. The pan gets hot, the garlic smells amazing, the sauce thickens quickly, and everything turns glossy and bright. It feels lively. A little rushed, maybe, but in a good way. Like dinner is happening and you didnโ€™t have to overthink it.

Ingredient Notes

The ingredients for Copycat Panda Express Sizzling Shrimp are simple, but each one has a clear job. The shrimp gives you that tender, juicy bite, the vegetables add color and crunch, and the sauce brings everything together with sweet, salty, tangy, and spicy flavor. Since this is a quick stir fry, I really recommend prepping everything before you start cooking. Once the pan is hot, there is no peaceful little pause to go searching for the chili paste. Ask me how I know.

  • Vegetable Oil: Youโ€™ll need 2 tbsp vegetable oil to cook the shrimp and vegetables over high heat. Vegetable oil works well because it has a neutral flavor and handles heat nicely. Since this wok-fired shrimp recipe cooks quickly, a hot pan helps the shrimp and vegetables cook fast instead of steaming. If the pan is too cool, the vegetables can turn soft and watery, and the shrimp may not get that quick-cooked texture. We want sizzling. Not sad little steam clouds.
  • Large Shrimp: Use 1 lb large shrimp, peeled and deveined. Large shrimp are perfect for Copycat Panda Express Sizzling Shrimp because they cook quickly but still feel juicy and satisfying. Make sure they are thawed and patted dry before they hit the pan. Wet shrimp can steam instead of sear, and the texture wonโ€™t be quite as nice. Also, shrimp cook fast. Like, turn-your-back-for-one-second fast. So keep an eye on them and remove them from the pan as soon as they turn pink and opaque.
  • Garlic: The 3 cloves garlic, minced, give this Panda Express copycat shrimp its warm, savory base. Garlic makes the kitchen smell amazing almost instantly, which is lovely until everyone suddenly appears asking when dinner will be ready. Since garlic burns quickly over high heat, keep it moving in the pan and donโ€™t let it sit alone too long. Burnt garlic can take over a dish fast, and not in a charming way.
  • Yellow Onion: One diced yellow onion adds sweetness and savory flavor. As it cooks, it softens slightly and blends into the stir fry while still giving a little texture. I like yellow onion here because itโ€™s mild and reliable, but if you only have white onion, that works too. This easy shrimp stir fry is not here to punish you for using whatโ€™s in the pantry.
  • Red Bell Pepper: One diced red bell pepper adds sweetness, color, and crunch to this sweet and spicy shrimp stir fry. Red bell pepper balances the chili paste and makes the dish look bright and cheerful. Try to cut the pieces around the same size so they cook evenly. You want them crisp-tender, not mushy. A little bite makes the whole dish feel fresher.
  • Sugar Snap Peas: The 8 oz sugar snap peas bring crunch, sweetness, and that bright green color that makes the skillet look like dinner has its life together. Sugar snap peas cook quickly, so they only need a few minutes. If they go too long, they lose their snap, which feels like a personal betrayal considering โ€œsnapโ€ is literally in the name.
  • Low-Sodium Soy Sauce: The 2 tbsp low-sodium soy sauce give the sauce its salty, savory flavor. I like using low-sodium soy sauce because oyster sauce also brings salt, and itโ€™s nice to have a little control. If you use regular soy sauce, the dish may taste saltier, so keep that in mind. The goal is bold flavor, not โ€œplease hand me a gallon of water.โ€
  • Rice Vinegar: One teaspoon of rice vinegar adds brightness and a soft tang. It balances the sweetness from the brown sugar and the richness from the oyster sauce. It doesnโ€™t make the sauce taste sour. It just lifts everything a bit, like opening a window in a warm kitchen. Small ingredient, big difference.
  • Chili Paste: The 1 tsp chili paste gives this Copycat Panda Express Sizzling Shrimp a gentle kick. You can add more or less depending on your spice mood. I usually start with the recipe amount, then adjust next time if I want more heat. Chili paste has a way of sneaking up, so if youโ€™re unsure, go slowly. Dinner should have personality, not make you question your choices.
  • Oyster Sauce: The 2 tbsp oyster sauce add deep savory flavor and that restaurant-style richness. Itโ€™s thick, bold, and slightly sweet, which helps make the sauce taste rounded and satisfying. If youโ€™ve never cooked with oyster sauce before, this sizzling shrimp recipe is a nice place to start. It does a lot of flavor work without needing a long list of extras.
  • Brown Sugar: One tablespoon of brown sugar adds sweetness and helps balance the salty, tangy, and spicy ingredients. It also gives the sauce a deeper flavor than plain white sugar would. This isnโ€™t meant to make the dish candy-sweet. Itโ€™s just enough to give that sweet-spicy takeout-style balance.
  • Cornstarch: The 1 tbsp cornstarch thickens the sauce so it clings to the shrimp and vegetables instead of sliding sadly to the bottom of the pan. Whisk it well with the sauce ingredients before adding it to the skillet. Cornstarch can clump if it doesnโ€™t fully dissolve, and little sauce lumps are not the surprise weโ€™re looking for tonight.
  • Water: The ยผ cup water helps loosen the sauce and gives the cornstarch enough liquid to work properly. As the sauce heats, it thickens into a glossy coating. If the sauce gets too thick, you can add a tiny splash more water. Just donโ€™t overdo it. Weโ€™re making shrimp stir fry, not accidental soup.

How to Make Copycat Panda Express Sizzling Shrimp?

Making Copycat Panda Express Sizzling Shrimp is fast, so prep everything before the stove goes on. Peel and devein the shrimp, chop the onion and bell pepper, mince the garlic, measure the snap peas, and whisk the sauce. This is one of those recipes where a little organization at the start saves you from frantic countertop chaos later. And I say that as someone who has definitely opened three drawers looking for cornstarch while garlic was already in the pan.

Step 1: Heat the oil

Heat the vegetable oil in a large wok or skillet over high heat. You want the pan hot before adding the shrimp because high heat helps everything cook quickly. If the pan isnโ€™t hot enough, the shrimp may release too much moisture and steam instead. A wok is great if you have one, but a large skillet works perfectly fine. Use what you have and keep the energy confident.

Step 2: Cook the shrimp

Add the peeled and deveined shrimp to the hot pan. Cook for about 2 to 3 minutes, or until the shrimp are no longer translucent. They should turn pink and opaque, but donโ€™t let them go too long because theyโ€™ll return to the pan later. Transfer the shrimp to a separate plate. This little pause keeps them from overcooking while the vegetables cook. Shrimp are wonderful, but they have a very small patience window.

Step 3: Cook the garlic and onion

Add the minced garlic and diced yellow onion to the wok or skillet. Cook for about 2 minutes, stirring often. The onion should start to soften, and the garlic should smell fragrant. Keep everything moving so the garlic doesnโ€™t burn. This step builds the savory base for the whole Panda Express copycat shrimp dish, and it smells so good you may suddenly feel more optimistic about dinner.

Step 4: Add the red bell pepper and snap peas

Stir in the diced red bell pepper and sugar snap peas. Cook for 2 to 3 minutes, stirring frequently, until the vegetables are crisp-tender. You want them cooked but still fresh and bright. The red bell pepper brings sweetness, and the sugar snap peas add crunch. This is where the skillet starts looking colorful and cheerful, which is always nice on a weeknight.

Step 5: Whisk the sauce

In a medium bowl, whisk together the low-sodium soy sauce, rice vinegar, chili paste, oyster sauce, brown sugar, cornstarch, and water. Whisk until the cornstarch is fully dissolved and the sauce looks smooth. This sauce is the heart of the Copycat Panda Express Sizzling Shrimp, so take a second to make sure itโ€™s mixed well. No dry cornstarch hiding at the bottom of the bowl, please and thank you.

Step 6: Add the sauce to the pan

Pour the sauce mixture into the wok with the vegetables. Stir continuously as the sauce heats and thickens. The cornstarch works quickly, so the sauce should become glossy and slightly thick in a short time. Keep stirring so it coats the vegetables evenly and doesnโ€™t stick to the bottom of the pan. This is one of those quick kitchen moments where you actually do need to stay close. No wandering off to answer a text.

Step 7: Return the shrimp

Add the cooked shrimp back to the pan and toss everything together until the shrimp are coated in sauce and warmed through. Since the shrimp are already cooked, they only need a brief moment here. The finished Copycat Panda Express Sizzling Shrimp should look glossy, saucy, colorful, and ready to eat immediately. If youโ€™re tempted to sneak one shrimp straight from the pan, I understand completely.

Step 8: Serve immediately

Serve the shrimp right away while the vegetables are still crisp and the sauce is hot. This sweet and spicy shrimp stir fry is especially good over steamed rice, fried rice, noodles, or cauliflower rice. Spoon any extra sauce over the top because that sauce worked hard and deserves to be appreciated. Leaving it behind in the pan just feels wrong.

Storage Options

Copycat Panda Express Sizzling Shrimp tastes best fresh from the pan because the shrimp are tender and the vegetables still have their crisp bite. That said, leftovers can absolutely still be enjoyed if you treat them gently. The main thing is not to overcook the shrimp when reheating. Shrimp can turn rubbery pretty quickly, and nobody wants dinner to bounce back at them.

Store leftover Panda Express copycat shrimp in an airtight container in the refrigerator for up to 3 days. Let the shrimp cool slightly first, but donโ€™t leave it sitting out too long. Keep the shrimp, vegetables, and sauce together so everything stays flavorful. If you served it over rice or noodles, I usually like storing those separately so they donโ€™t soak up all the sauce and turn too soft.

To reheat, warm the shrimp and vegetables gently in a skillet over medium-low heat until just heated through. Add a small splash of water if the sauce has thickened too much in the fridge. You can also microwave leftovers in short intervals, stirring between each one. Go slow here. Reheating shrimp is not the moment to be bold and reckless.

Freezing is possible, but Iโ€™ll be honest โ€” itโ€™s not my favorite for this wok-fired shrimp recipe. Cooked shrimp and stir-fried vegetables can change texture after freezing and thawing. The shrimp may become a little rubbery, and the snap peas and bell peppers may soften. If you do freeze it, store it in a freezer-safe container for up to 2 months, thaw it overnight in the refrigerator, and reheat gently.

For meal prep, I prefer prepping the ingredients instead of cooking the whole dish ahead. Chop the onion and bell pepper, trim the sugar snap peas if needed, mince the garlic, and whisk the sauce. Store everything separately in the fridge, then cook the Copycat Panda Express Sizzling Shrimp fresh when youโ€™re ready. You still get a fast dinner, but the shrimp and vegetables taste much better.

Variations & Substitutions

This Copycat Panda Express Sizzling Shrimp is easy to adjust, which is great because real-life cooking is rarely perfect. Maybe you want it spicier. Maybe you need it milder. Maybe you forgot sugar snap peas but somehow have three zucchinis. It happens. Stir fry recipes are flexible, and this one gives you lots of room to play around while keeping that sweet, savory, takeout-style flavor.

  • Make It Spicier: Add more chili paste if you want extra heat. Start with another ยฝ tsp and build from there. You can also add crushed red pepper flakes or a drizzle of chili oil at the end. This spicy shrimp stir fry is easy to customize, so you can keep it mild for the table and spice up your own bowl if needed. I do this often because not everyone wants dinner to come with a warning label.
  • Make It Milder: If youโ€™re sensitive to spice, reduce the chili paste to ยฝ tsp or leave it out completely. The sauce will still have plenty of flavor from the soy sauce, oyster sauce, garlic, brown sugar, and rice vinegar. You can always serve chili paste or chili oil on the side. This is helpful when one person loves heat and another person thinks mild salsa is a personal attack.
  • Use Different Vegetables: Broccoli, zucchini, mushrooms, carrots, baby corn, snow peas, or bok choy can all work in this Panda Express copycat recipe. Choose vegetables that cook quickly or cut them small enough to become crisp-tender in the hot pan. If using firmer vegetables like carrots or broccoli, slice them thin or blanch them first so they cook evenly. The goal is fresh and crisp, not half-raw and stressful.
  • Swap the Shrimp: You can use chicken, beef, tofu, scallops, or even a mix of proteins instead of shrimp. Chicken and beef need longer cooking times, while tofu should be pressed and browned before adding the sauce. Scallops cook quickly like shrimp, so keep an eye on them. The sauce works with a lot of options because itโ€™s sweet, savory, tangy, and a little spicy.
  • Use Honey Instead of Brown Sugar: If you donโ€™t have brown sugar, honey can work as a substitute. It adds sweetness and helps the sauce become glossy. Start with about 1 tbsp honey and adjust to taste. The flavor will be slightly different, but still delicious. Itโ€™s a small swap, not a dinner emergency.
  • Use Tamari Instead of Soy Sauce: Tamari can be used instead of soy sauce for a slightly richer flavor. Itโ€™s also a helpful option if you want to make this Copycat Panda Express Sizzling Shrimp gluten-free, as long as you choose certified gluten-free tamari. The sauce will still be savory, balanced, and glossy.
  • Add Ginger: Fresh ginger is a lovely addition to this wok-fired shrimp recipe. Add 1 to 2 tsp minced ginger with the garlic for a warmer, brighter flavor. Ginger pairs beautifully with shrimp, soy sauce, garlic, and chili paste. It gives the dish a little extra sparkle, like the sauce suddenly got a personality boost.
  • Make Extra Sauce: If you like a saucier stir fry, increase the sauce ingredients slightly. This is especially nice if youโ€™re serving the shrimp over rice or noodles because the extra sauce soaks into the base. And honestly, extra sauce is rarely a bad idea. Dry rice under a stir fry feels a little tragic, doesnโ€™t it?
  • Serve It Low-Carb: Serve this Copycat Panda Express Sizzling Shrimp over cauliflower rice, sautรฉed cabbage, or steamed vegetables for a lighter option. The shrimp and sauce bring plenty of flavor, so you donโ€™t need a heavy base if you donโ€™t want one. Add extra vegetables, and it still feels like a full, satisfying meal.
  • Add Cashews or Sesame Seeds: For extra crunch, sprinkle toasted cashews or sesame seeds over the finished dish. Cashews add richness, while sesame seeds add a nutty finish. Itโ€™s a tiny topping, but it makes the dish feel a little more special. Like it put on nice shoes before coming to the table.

What to Serve With Copycat Panda Express Sizzling Shrimp?

Copycat Panda Express Sizzling Shrimp is saucy, colorful, and full of sweet-spicy flavor, so it pairs well with simple sides that let the shrimp shine. Rice is the classic choice, but noodles, vegetables, and takeout-style sides all work beautifully. Basically, you want something that catches the sauce without stealing the spotlight.

  • Steamed White Rice: Steamed white rice is the easiest and most classic side for Copycat Panda Express Sizzling Shrimp. It soaks up the glossy sauce and keeps the meal simple. Spoon the shrimp, vegetables, and sauce right over the top, and dinner is done. No drama. No fuss. Just a cozy bowl that makes sense.
  • Fried Rice: Fried rice turns this Panda Express copycat shrimp into a full takeout-style meal at home. You can use vegetable fried rice, egg fried rice, or leftover rice tossed with a little soy sauce and egg. The savory rice pairs so well with the sweet and spicy shrimp sauce. Itโ€™s a great choice when you want dinner to feel extra satisfying.
  • Chow Mein or Noodles: Noodles are delicious with this sweet and spicy shrimp stir fry. Chow mein, lo mein, rice noodles, or even plain spaghetti can work if thatโ€™s what you have. Is spaghetti traditional here? Not exactly. But on a busy night, Iโ€™m not calling the noodle police. The sauce coats noodles beautifully, and thatโ€™s what matters.
  • Cauliflower Rice: Cauliflower rice is a good lighter option. It keeps the meal lower in carbs while still giving the sauce somewhere to go. Since the shrimp and vegetables are already bold and flavorful, cauliflower rice works surprisingly well. I like adding a little extra sauce on top so it doesnโ€™t feel too plain.
  • Steamed Broccoli: Steamed broccoli pairs nicely with this wok-fired shrimp recipe because it adds freshness and catches the sauce like a champ. You can serve it on the side or stir it right into the pan. Broccoli and glossy sauce are a dependable team, and I respect dependable teams.
  • Egg Rolls: Egg rolls make the meal feel more like takeout night, but at home. Serve them on the side for crunch and extra flavor. Vegetable egg rolls, chicken egg rolls, or spring rolls all work well. They add that fun appetizer feeling without making the main shrimp dish any harder.
  • Asian Cucumber Salad: A cool cucumber salad adds crisp freshness beside the warm shrimp. The tangy flavor balances the sweet and savory sauce, which keeps the meal from feeling too heavy. This is a great side when you want something bright and refreshing next to all that saucy goodness.
  • Stir-Fried Green Beans: Stir-fried green beans are a great side if you want more vegetables. Keep them simple with garlic, a little soy sauce, and sesame oil. Their crisp texture works well with the tender shrimp and snap peas. More crunch, more color, more dinner happiness. Thatโ€™s the math.
  • Wonton Soup: Wonton soup pairs beautifully with Copycat Panda Express Sizzling Shrimp if you want a cozy takeout-style dinner at home. The light broth balances the saucy shrimp and vegetables. Itโ€™s especially nice on a cooler evening when you want something warm, savory, and satisfying.
  • Fresh Pineapple or Orange Slices: Fresh pineapple or orange slices add sweetness and brightness on the side. It might sound simple, but the fruit works really well with the sweet-spicy sauce. Plus, it adds a fresh little pop to the plate. Sometimes a few orange slices really do make dinner feel happier.

Yes, frozen shrimp work well for Copycat Panda Express Sizzling Shrimp. Just thaw them completely before cooking and pat them dry with paper towels.
