This Sausage Spinach Cheese Frittata is a simple, oven-baked dish made with Italian sausage, eggs, spinach, bell peppers, milk, and Cheddar cheese. A satisfying option for breakfast, brunch, or a quick dinner, prepared in just 35 minutes.
Preheat the oven to 350°F (177°C). Heat the olive oil in a large ovenproof skillet over medium-high heat.
Add the ground Italian sausage to the skillet and cook for 6–8 minutes, breaking it apart with a spoon, until fully cooked and lightly browned.
Add the diced bell peppers to the skillet and cook for approximately 4 minutes, or until softened.
Add the spinach and cook for 2–3 minutes, stirring occasionally, until wilted. Season lightly with salt and black pepper. Reduce the heat to medium.
In a large mixing bowl, whisk together the eggs, milk, and ¾ cup of the shredded Cheddar cheese until well combined.
Pour the egg mixture evenly into the skillet over the sausage and vegetables. Cook for about 3 minutes, or until the edges begin to set.
Sprinkle the remaining ¼ cup of Cheddar cheese evenly over the top. Transfer the skillet to the middle rack of the preheated oven.
Bake for approximately 20 minutes, or until the center of the frittata is fully set.
Remove from the oven, garnish with sliced chives, and allow to cool slightly before slicing and serving.
