Ingredients

  • 2 lb lean ground beef
  • 1 tbsp olive oil
  • 1 onion chopped
  • 1 bell pepper chopped
  • 1 c panko breadcrumbs
  • ¼ c Worcestershire sauce
  • 2 tsp garlic minced
  • 2 large eggs
  • 1 tsp onion powder
  • ½ c mozzarella cheese shredded
  • Salt to taste
  • Black pepper to taste
  • 4 slices provolone cheese

Instructions

Step 1: Cook the Vegetables

  • Heat the olive oil in a skillet over medium heat.
  • Add the chopped onion and bell pepper.
  • Sauté until the vegetables are tender.
  • Remove from heat and set aside.

Step 2: Preheat the Oven

  • Preheat the oven to 350°F.
  • Lightly grease a baking dish or loaf pan.

Step 3: Prepare the Meat Mixture

  • In a large mixing bowl, combine the ground beef, eggs, sautéed onion and bell pepper, panko breadcrumbs, minced garlic, onion powder, Worcestershire sauce, salt, and black pepper.
  • Mix until the ingredients are evenly combined.
  • Avoid overmixing to maintain a tender texture.

Step 4: Form the First Layer

  • Place half of the meat mixture into the prepared baking dish or loaf pan.
  • Shape it into the bottom portion of a loaf.

Step 5: Add the Provolone

  • Place the provolone cheese slices over the first layer of meat.
  • Keep the cheese slightly away from the edges to help prevent leaking during baking.

Step 6: Add the Remaining Meat

  • Place the remaining meat mixture over the provolone cheese.
  • Shape it into a loaf and seal the edges securely so the cheese remains enclosed.

Step 7: Bake

  • Bake for 30 minutes.

Step 8: Add the Mozzarella

  • Remove the meatloaf from the oven.
  • Sprinkle the shredded mozzarella cheese evenly over the top.

Step 9: Finish Baking

  • Return the meatloaf to the oven.
  • Bake for an additional 15 minutes, or until the cheese is melted and the meatloaf is fully cooked.
  • The internal temperature should reach 160°F.

Step 10: Rest and Serve

  • Remove the meatloaf from the oven.
  • Allow it to rest for several minutes before slicing.
  • Serve warm.
