Ingredients

  • 1 c chopped nuts
  • 5 tbsp Kentucky bourbon
  • 1 16 oz package powdered sugar
  • 1/2 c butter softened
  • 18 oz semi-sweet chocolate

Instructions

Soak the nuts.

  • Place the chopped nuts in a jar. Pour the Kentucky bourbon over the nuts.

Seal and rest.

  • Seal the jar tightly and allow the nuts to soak in the bourbon for at least 8 hours, or overnight.

Prepare the filling.

  • In a medium bowl, mix the powdered sugar and softened butter until light and fluffy.

Add the soaked nuts.

  • Stir the soaked nuts and bourbon into the powdered sugar and butter mixture until fully combined.

Chill if necessary.

  • If the mixture is too sticky to handle, refrigerate it for 30 minutes to 1 hour.

Shape the filling.

  • Using a small cookie scoop, shape the mixture into 3/4-inch balls.

Arrange on a baking sheet.

  • Place the formed balls onto a parchment-lined baking sheet.

Chill the centers.

  • Refrigerate the formed balls for at least 8 hours, or overnight, until firm.

Prepare a second baking sheet.

  • Line another baking sheet with parchment paper and set aside.

Prepare the double boiler.

  • Bring water to a boil in the bottom pot of a double boiler. Reduce the heat to low.

Melt the chocolate.

  • Place the semi-sweet chocolate in the top pot of the double boiler. Set it over the bottom pot.

Stir until smooth.

  • Stir the chocolate with a rubber spatula, scraping the bottom and sides of the pot, until fully melted and smooth.

Coat the bourbon balls.

  • Roll each chilled ball in the melted chocolate until fully coated.

Transfer to the prepared sheet.

  • Place the coated bourbon balls on the parchment-lined baking sheet.

Chill until set.

  • Refrigerate until the chocolate shells have hardened.

Serve.

  • Serve chilled or at cool room temperature.
