Ingredients

  • 3 tbsp olive oil
  • 1 1/2 lb boneless skinless chicken breasts pounded to an even thickness
  • 1 to 2 tsp 21 Salute Seasoning or poultry seasoning
  • 1 tsp kosher salt or to taste
  • 1 tsp freshly ground black pepper or to taste
  • 1/2 c white wine* or chicken broth or as necessary
  • 3 tbsp unsalted butter or more if you want extra sauce
  • 1 tbsp garlic finely minced; or to taste
  • 2 tsp fresh parsley optional for garnishing

Instructions

  • Gently warm up the olive oil in a skillet, over high heat.
  • Place the flattened chicken breasts into the skillet. Season them with 21 Salute Seasoning, salt and pepper. Allow them to cook undisturbed for 5 minutes on one side until they begin to acquire a hue.
  • Carefully flip the chicken over. Let it cook for 5 minutes or until it is thoroughly cooked and golden on the other side.
  • Remove it from the skillet. Set it aside on a plate to rest.
  • In that skillet add wine or chicken broth to deglaze ensuring you scrape up any bits clinging to its bottom. Allow it to simmer for a few seconds.
  • Reduce the heat to low add butter allowing it to melt then stir in garlic. Cook until fragrant without browning for 1 minute.
  • Return the chicken back into the skillet while spooning over it generously with butter sauce, for a coating.
  • If desired sprinkle parsley over the chicken before serving.
