Preheat the oven to 450°F.
Line a baking sheet with parchment paper and set aside.
In a medium mixing bowl, sift together the self-rising flour and sugar.
Make a well in the center of the flour mixture.
Add 1 1/2 cups heavy cream to the well.
Using a fork, gradually mix the cream into the flour mixture until the dough is just moistened.
Add the shredded sharp cheddar cheese and cooked crumbled bacon.
Gently mix until the cheese and bacon are evenly distributed throughout the dough.
If the dough appears dry, add the reserved heavy cream 1 tbsp at a time, mixing gently after each addition.
Turn the dough out onto a lightly floured surface.
With floured hands, gently pat the dough into a rough circle approximately 3/4 inch thick. Do not knead the dough.
Dip a 3-inch biscuit cutter in flour.
Cut the dough into biscuit rounds, pressing the cutter straight down.
Place the biscuit rounds onto the prepared baking sheet, spacing them approximately 2 inches apart.
Brush the tops of the biscuits with the additional 2 tbsp heavy cream.
Bake for 12 to 14 minutes, or until the biscuits are puffy and golden.
Remove the biscuits from the oven.
Serve hot with butter.
