Preheat the oven to 350°F.
In a medium bowl, combine the all-purpose flour, baking soda, and salt.
Stir the dry ingredients until evenly combined, then set aside.
In a large mixing bowl, combine the raw or turbinado sugar and melted butter.
Using an electric mixer, beat the sugar and butter until combined.
Add the eggs one at a time, beating well after each addition.
Add the mashed ripe banana, plain low-fat yogurt, dark rum, and vanilla extract to the wet mixture.
Beat until the ingredients are fully incorporated.
Add the dry ingredients to the wet ingredients.
Mix on low speed until just combined. Do not overmix the batter.
Using a rubber spatula, gently fold in 1/2 cup of sweetened flaked coconut.
Grease a 9x5-inch loaf pan with non-stick cooking spray.
Line the loaf pan with parchment paper, leaving excess parchment hanging over two sides to assist with removal after baking.
Transfer the banana bread batter to the prepared loaf pan.
Smooth the top of the batter evenly.
Sprinkle the remaining 1 tbsp of sweetened flaked coconut over the top.
Bake in the preheated oven for approximately 60 minutes, or until the bread is fully baked.
Insert a toothpick into the center of the loaf to test for doneness.
Remove the bread from the oven when the toothpick comes out clean or with only a few moist crumbs.
If the top of the banana bread becomes golden brown before the center is fully baked, cover the loaf loosely with aluminum foil and continue baking until done.
While the bread is baking, prepare the lime glaze.
In a small bowl, combine the powdered sugar and freshly squeezed lime juice.
Stir until the glaze is smooth and pourable.
Remove the banana bread from the oven and place the pan on a cooling rack.
Allow the bread to cool in the pan for several minutes.
Using the parchment paper overhang, carefully lift the bread from the loaf pan.
Place the bread directly on the cooling rack.
Drizzle the lime glaze evenly over the top of the banana bread.
Allow the bread to cool completely before slicing.
Slice and serve.
