Ingredients

  • 3 c tomatoes
  • 3 c watermelon chunks
  • 1/2 cucumber
  • 6 oz herbed feta cheese
  • 1/8 c olive oil
  • 1/4 c red wine vinegar
  • Fresh basil chopped
  • Salt to taste

Instructions

Prepare the tomatoes.

  • Slice the tomatoes into small wedges, using a variety of shapes and colors if desired for presentation. Measure out 3 cups total and place them into a large mixing or serving bowl.

Prepare the watermelon.

  • Cut the watermelon chunks into smaller bite-sized pieces and add them to the bowl with the tomatoes.

Prepare the cucumber.

  • Cut the cucumber into small chunks and add it to the bowl.

Add the feta cheese.

  • Add the herbed feta cheese to the bowl and gently combine the ingredients.

Prepare the vinaigrette.

  • In a small bowl, combine the olive oil and red wine vinegar. Whisk until well blended.

Dress the salad.

  • Pour the vinaigrette over the tomato and watermelon mixture and toss gently to coat evenly.

Finish the salad.

  • Sprinkle the salad with fresh chopped basil and add salt to taste, if desired.
