In a mixing bowl, combine the warm water, yeast, and granulated sugar.
Whisk until combined.
Cover the bowl and allow the mixture to stand for approximately 5 minutes, or until the yeast is foamy and fully dissolved.
Preheat the oven to 150°F / 66°C.
Once the oven reaches temperature, turn it off.
In the bowl of a stand mixer, add the olive oil, salt, and all-purpose flour.
Add the activated yeast mixture to the bowl.
Mix on low speed for approximately 2 minutes, or until the ingredients begin to combine.
Increase to medium speed and knead for 7 to 8 minutes, or until a cohesive dough ball forms.
If the dough is too sticky, add additional flour 1 tablespoon at a time, mixing after each addition.
Test the dough by gently pressing it with a finger. If it slowly springs back, it is ready to rise.
Lightly grease a large bowl.
Transfer the dough to the prepared bowl.
Turn the dough in the bowl until it is lightly coated with oil on all sides.
Cover the bowl.
Place the covered bowl in the warm, turned-off oven with the oven door slightly open.
Allow the dough to rise for 60 to 90 minutes, or until doubled in size.
Once risen, gently punch down the dough to release excess air.
Divide the dough into two equal portions.
Roll each portion into a 12-inch disc, if using both crusts immediately.
Allow the shaped dough to rest briefly before adding the toppings.
