Tandoori Chicken Pizza

Ingredients

For the Dough

  • 1 1/3 cups warm water between 100°F and 110°F / 38°C and 43°C
  • 2 1/4 tsp instant yeast or active dry yeast
  • 1 tbsp granulated sugar
  • 2 tbsp olive oil or neutral-flavored oil
  • 3/4 tsp salt
  • 3 1/2 cups all-purpose flour

For the Tandoori Chicken

  • 450 g chicken breast cut into small pieces
  • 2 tbsp yogurt
  • 1 tbsp Shan Tandoori Masala powder
  • 1 tbsp freshly squeezed lemon juice
  • 2 tbsp oil for cooking

For the Pizza

  • Prepared pizza crust
  • 1/2 cup pizza sauce
  • Prepared tandoori chicken
  • 2 cups cheese
  • Green bell peppers sliced, optional
  • Red bell peppers sliced, optional
  • Onions sliced, optional
  • Olives sliced, optional

Instructions

Prepare the Pizza Dough

  • In a mixing bowl, combine the warm water, yeast, and granulated sugar.
  • Whisk until combined.
  • Cover the bowl and allow the mixture to stand for approximately 5 minutes, or until the yeast is foamy and fully dissolved.
  • Preheat the oven to 150°F / 66°C.
  • Once the oven reaches temperature, turn it off.
  • In the bowl of a stand mixer, add the olive oil, salt, and all-purpose flour.
  • Add the activated yeast mixture to the bowl.
  • Mix on low speed for approximately 2 minutes, or until the ingredients begin to combine.
  • Increase to medium speed and knead for 7 to 8 minutes, or until a cohesive dough ball forms.
  • If the dough is too sticky, add additional flour 1 tablespoon at a time, mixing after each addition.
  • Test the dough by gently pressing it with a finger. If it slowly springs back, it is ready to rise.
  • Lightly grease a large bowl.
  • Transfer the dough to the prepared bowl.
  • Turn the dough in the bowl until it is lightly coated with oil on all sides.
  • Cover the bowl.
  • Place the covered bowl in the warm, turned-off oven with the oven door slightly open.
  • Allow the dough to rise for 60 to 90 minutes, or until doubled in size.
  • Once risen, gently punch down the dough to release excess air.
  • Divide the dough into two equal portions.
  • Roll each portion into a 12-inch disc, if using both crusts immediately.
  • Allow the shaped dough to rest briefly before adding the toppings.

Prepare the Tandoori Chicken

  • In a bowl, combine the chicken pieces, yogurt, Shan Tandoori Masala powder, and freshly squeezed lemon juice.
  • Mix until the chicken is evenly coated.
  • Cover and marinate for at least 30 minutes, or refrigerate overnight for deeper flavor.
  • Heat the oil in a skillet over medium-high heat.
  • Add the marinated chicken to the skillet.
  • Cook until the chicken is fully cooked through and any excess liquid has evaporated.
  • Remove the chicken from the heat.
  • Allow the chicken to cool slightly before adding it to the pizza crust.

Assemble and Bake the Pizza

  • Preheat the oven to 475°F / 246°C.
  • Lightly grease a baking sheet or pizza pan.
  • Place the prepared pizza crust on the greased pan.
  • Spread the pizza sauce evenly over the crust.
  • Add a light layer of cheese over the sauce.
  • Arrange the prepared tandoori chicken evenly over the cheese.
  • Add the bell peppers, sliced onions, olives, or any desired additional toppings.
  • Sprinkle the remaining cheese over the chicken and toppings.
  • Finish with a small amount of additional toppings, if desired.
  • Transfer the pizza to the preheated oven.
  • Bake for 12 to 15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  • Remove the pizza from the oven.
  • Allow it to rest briefly before slicing.
  • Slice and serve immediately while hot.

Notes

To make Tandoori Chicken Pizza gluten free, replace the all-purpose flour pizza dough with a certified gluten-free pizza dough or gluten-free pizza crust.
If using store-bought gluten-free crust, prepare and bake it according to the package instructions, as baking times may vary.
Confirm that the Shan Tandoori Masala powder is labeled gluten free, as some spice blends may contain additives or cross-contact warnings.
Use gluten-free pizza sauce, gluten-free cheese, and gluten-free toppings.
