Ingredients

  • 1/2 cup butter softened
  • 1 box Nilla wafers 11 oz
  • 1 1/2 cups granulated sugar
  • 6 large eggs
  • 1/2 cup milk
  • 1 1/2 tsp vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup pecans roughly chopped

Instructions

  • Preheat the oven to 350°F.
  • Thoroughly grease a 10-inch bundt pan, ensuring all ridges and inner surfaces are well coated.
  • Place the Nilla wafers in a large resealable plastic bag.
  • Seal the bag securely and crush the wafers with a rolling pin or wooden spoon until fine crumbs form.
  • Set the crushed wafer crumbs aside.
  • In a large mixing bowl, combine the softened butter and granulated sugar.
  • Mix for 1 to 2 minutes, or until the mixture becomes light and airy.
  • Add the eggs one at a time, mixing well after each addition.
  • Continue mixing until the eggs are fully incorporated and the batter is smooth.
  • Add the milk and vanilla extract.
  • Mix until the liquid ingredients are evenly blended into the batter.
  • Add the crushed Nilla wafer crumbs to the bowl.
  • Add the sweetened shredded coconut and chopped pecans.
  • Fold the mixture gently until the wafer crumbs, coconut, and pecans are fully incorporated.
  • Transfer the batter into the prepared bundt pan.
  • Spread the batter evenly in the pan with a spatula.
  • Place the bundt pan in the preheated oven.
  • Bake for 45 to 50 minutes, or until the cake is set and a toothpick inserted into the center comes out mostly clean.
  • During the last 15 to 20 minutes of baking, cover the top loosely with aluminum foil to prevent excessive browning.
  • Remove the cake from the oven.
  • Allow the cake to cool in the pan for 10 minutes.
  • Run a knife gently around the edges and center tube of the bundt pan to loosen the cake.
  • Place a serving plate over the bundt pan.
  • Carefully invert the cake onto the serving plate.
  • Lift the pan away slowly.
  • Allow the cake to cool to room temperature before slicing.
  • Slice and serve as desired.

Notes
