Ingredients

  • 1 lb lean ground beef
  • 1/2 white onion chopped
  • 2 green bell peppers chopped
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 can petite diced tomatoes 14 oz
  • 3/4 cup white long grain rice
  • Salt to taste
  • Ground black pepper to taste
  • 1 1/2 cups Monterey Jack cheese shredded

Instructions

  • Place a large skillet over medium heat.
  • Add the lean ground beef to the skillet.
  • Cook the ground beef until fully browned, breaking it apart into small crumbles as it cooks.
  • Drain any excess grease from the skillet.
  • Add the chopped white onion, chopped green bell peppers, and minced garlic to the browned ground beef.
  • Cook for approximately 3 minutes, stirring occasionally, until the peppers begin to soften and the garlic becomes fragrant.
  • Add the tomato paste, beef broth, petite diced tomatoes, white long grain rice, salt, and ground black pepper to the skillet.
  • Stir well until the tomato paste is fully incorporated and the rice is evenly distributed.
  • Bring the mixture to a boil.
  • Allow the mixture to boil for 1 minute.
  • Reduce the heat to low.
  • Cover the skillet with a lid.
  • Simmer for 18 to 20 minutes, or until the rice is tender and most of the liquid has been absorbed.
  • Remove the lid and gently fluff the mixture with a fork.
  • Sprinkle the shredded Monterey Jack cheese evenly over the top of the skillet.
  • Cover the skillet again.
  • Turn off the heat.
  • Allow the skillet to rest, covered, until the cheese has melted.
  • Serve warm.
