Ingredients

Strawberry Freezer Pie Filling:

  • 1 c heavy whipping cream
  • 1/4 c powdered sugar
  • 1 can sweetened condensed milk 14 ounces
  • 4 oz cream cheese at room temperature
  • 2 c strawberry puree measured after pureed
  • 1 prepared 10-inch vanilla wafer or sandwich cookie crust

Strawberry Shortcake Crumbles:

  • One 3 oz box strawberry-flavored gelatin
  • 1 c all-purpose flour divided (for gluten-free, use gluten-free flour in place of all-purpose flour)
  • 1/2 c butter divided
  • 1/2 c sugar
  • 1 tsp teaspoon vanilla extract

Instructions

To make the Strawberry Shortcake Crumbles:

  • Preheat your oven to 350°F (175°C).
  • In a bowl combine strawberry gelatin, 1/2 cup of flour, and 1/4 cup of butter until the mixture becomes crumbly. Set it aside.
  • In another bowl mix together 1/2 cup of flour, 1/2 cup of sugar, 1/4 cup of butter and vanilla extract until it forms crumbs.
  • Spread the strawberry and vanilla crumbles, on a baking sheet lined with parchment paper.
  • Bake without stirring for 7 to 8 minutes. Allow the crumbles to cool completely.
  • Once cooled break the crumbles into pieces.

For the Strawberry Freezer Pie Filling:

  • In a bowl use a mixer to whip heavy cream and powdered sugar until stiff peaks form. Place it in the fridge for use.
  • In another bowl beat cream cheese until smooth. Add sweetened condensed milk. Mix well.
  • Incorporate strawberry puree into the cream cheese mixture. Mix thoroughly.
  • Gently fold in whipped cream into the strawberry mixture until fully combined.
  • Pour the filling, into a pie crust.
  • Freeze the pie for 4 to 5 hours.

To Serve:

  • When you're ready to serve remove the pie from the freezer. Let it thaw for ten minutes.
