Ingredients

  • 8 oz white cheddar cheese shredded, or other melty cheese
  • 1 tbsp olive oil
  • 2 jalapeño peppers diced
  • 1 small onion diced
  • 4 cloves garlic minced
  • 1 medium tomato chopped, or cherry tomatoes
  • 5 oz diced roasted peppers canned or homemade
  • 1 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp cornstarch
  • 12 oz evaporated milk canned, or milk or cream
  • Hot sauce to taste

For Serving

  • Extra diced tomatoes
  • Sliced peppers
  • Red chili flakes
  • Fresh chopped cilantro
  • Crispy tortilla chips

Instructions

Heat the oil.

  • Heat the olive oil in a large pan or medium pot over medium heat.

Cook the peppers and onion.

  • Add the diced jalapeño peppers and diced onion. Cook for 3 to 4 minutes, or until softened.

Add the garlic.

  • Add the minced garlic and cook for 1 minute, or until fragrant.

Add the tomatoes and roasted peppers.

  • Add the chopped tomato and diced roasted peppers to the pan.

Add the spices.

  • Stir in the cayenne pepper, smoked paprika, cumin, salt, and pepper.

Cook the mixture.

  • Cook for 2 minutes, stirring occasionally, until the tomatoes begin to soften.

Prepare the milk mixture.

  • In a separate bowl or measuring cup, stir together the cornstarch and evaporated milk until fully combined and smooth.

Add the milk mixture.

  • Pour the evaporated milk mixture into the pan and stir well.

Add hot sauce.

  • Add hot sauce to taste and stir to combine.

Bring to a boil.

  • Bring the mixture to a gentle boil, stirring frequently.

Reduce the heat.

  • Reduce the heat to a simmer.

Add the cheese.

  • Add the shredded cheese a handful at a time, stirring continuously after each addition until melted and fully incorporated.

Finish the dip.

  • Continue stirring until the queso is smooth, creamy, and fully melted.

Remove from heat.

  • Remove the pan from the heat.

Garnish and serve.

  • Top with extra diced tomatoes, sliced peppers, red chili flakes, and fresh chopped cilantro. Serve warm with crispy tortilla chips.
