Ingredients

Salad

  • 2 cans / 15 oz each chickpeas rinsed and drained
  • 1 red bell pepper diced
  • 3 tbsp shallot diced
  • 1 large celery stalk diced
  • 1/4 cup golden raisins
  • 3 tbsp fresh cilantro chopped
  • 2 tbsp slivered almonds

Dressing

  • 1/2 cup mayonnaise
  • 1 1/2 tbsp lime juice
  • 2 tbsp curry powder
  • 1/2 tsp garlic powder
  • 1 tbsp honey
  • Salt to taste
  • Black pepper to taste

Instructions

  • Place the rinsed and drained chickpeas in a large mixing bowl.
  • Using a fork or potato masher, mash the chickpeas until mostly broken down.
  • Leave some chickpeas partially intact for texture, if desired.
  • Add the diced red bell pepper to the bowl.
  • Add the diced shallot.
  • Add the diced celery.
  • Add the golden raisins.
  • Add the chopped cilantro.
  • Add the slivered almonds.
  • Stir the salad ingredients until evenly distributed.
  • In a separate small bowl, add the mayonnaise.
  • Add the lime juice.
  • Add the curry powder.
  • Add the garlic powder.
  • Add the honey.
  • Season with salt and black pepper to taste.
  • Whisk or stir the dressing until fully combined and smooth.
  • Spoon the prepared dressing over the chickpea mixture.
  • Toss the salad until all ingredients are evenly coated with the dressing.
  • Cover the bowl with plastic wrap or a fitted lid.
  • Refrigerate the salad for 30 minutes before serving.
  • Stir the salad once more before serving.
  • Serve chilled in sandwiches, wraps, pita pockets, lettuce cups, grain bowls, or with crackers.
