Ingredients

  • 2 ¼ cups water
  • 1 cup uncooked white rice
  • 1 tbsp olive oil
  • 1 sweet onion chopped
  • 1 package Sazón seasoning 1.41 oz
  • 1 ½ tsp adobo seasoning
  • ½ tsp minced garlic
  • ½ tsp ground black pepper
  • 1 can red beans 15 oz, drained
  • 1 can pitted green olives 2.25 oz, optional

Instructions

Combine the rice, water, and oil.

  • Place the water, uncooked white rice, and olive oil in a medium saucepan.

Bring to a boil.

  • Set the saucepan over high heat and bring the mixture to a boil.

Add the onion and seasonings.

  • Stir in the chopped sweet onion, Sazón seasoning, adobo seasoning, minced garlic, and ground black pepper until evenly combined.

Reduce the heat and cover.

  • Reduce the heat to medium-low. Cover the saucepan with a tight-fitting lid.

Cook the rice.

  • Cook for 10 minutes, allowing the rice to absorb the seasoned liquid.

Add the beans and olives.

  • Stir in the drained red beans and the pitted green olives, if using.

Continue cooking.

  • Cover the saucepan again and continue cooking for approximately 10 minutes, or until the liquid has been absorbed and the rice is tender.

Adjust the texture, if needed.

  • If softer rice is desired, add up to an additional ½ cup water and continue cooking over low heat until the preferred texture is reached.

Enhance the flavor, if desired.

  • For additional flavor, add a small amount of powdered vegetable broth or seasoning. Adjust carefully, as Sazón, adobo, and broth seasonings may contain salt.

Mix before serving.

  • Remove the saucepan from the heat. Gently mix the rice and beans to distribute the beans, olives, and seasonings evenly.

Serve.

  • Serve warm as a side dish or main dish.

Notes

To make this recipe gluten-free, use certified gluten-free Sazón seasoning and adobo seasoning, as some seasoning blends may contain gluten-based additives or be processed near wheat.
