Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 large onion sliced
  • 8 oz fresh mushrooms sliced
  • 1 packet zesty Italian dressing mix
  • 8 oz cream cheese softened
  • 8 oz fresh spinach
  • 1 ½ c shredded mozzarella and provolone blend cheese
  • Salt to taste
  • Black pepper to taste

Instructions

Step 1: Preheat the Oven

  • Preheat the oven to 350°F.
  • Lightly grease a baking dish with nonstick cooking spray or oil.

Step 2: Sauté the Onion

  • Heat the olive oil in a skillet over medium heat.
  • Add the sliced onion and cook until softened and lightly caramelized.

  • Place the chicken breasts in the prepared baking dish in a single layer.

  • Spread an equal portion of the cream cheese mixture over each chicken breast.

Step 7: Wilt the Spinach

  • Add the fresh spinach to the skillet with the onions and mushrooms.
  • Cook until the spinach is wilted, stirring occasionally.

Step 8: Season the Chicken

  • Season the cream cheese-topped chicken with salt and black pepper to taste.

Step 9: Add the Spinach Mixture

  • Spoon the spinach, onion, and mushroom mixture evenly over the chicken breasts.

Step 10: Add the Cheese

  • Sprinkle the shredded mozzarella and provolone cheese blend evenly over the top.

Step 11: Bake

  • The internal temperature of the chicken should reach 165°F.
