Ingredients

Pork Loin Roast (about 1.3–1.5 kg / ~3 lbs)

Instructions

Sear the Pork

  • Warm a skillet over medium-high heat.
  • Lightly season pork with salt and pepper, then sear all sides (2–3 minutes per side) to lock in juices. Transfer to slow cooker.

Combine the Sauce

  • In a bowl, mix brown sugar, honey, soy sauce, vinegar, garlic, red pepper flakes, and a pinch of salt/pepper.
  • Stir well until sugar dissolves.

Load the Slow Cooker

  • Scatter sliced onion at the bottom.
  • Add seared pork on top, then pour sauce over.
  • Top with pineapple chunks.

Slow Cook

  • Cover and cook on LOW for ~6–7 hours or on HIGH for ~3–4 hours until the pork is fork-tender.
  • Optionally baste the pork midway to intensify flavors.

Thicken the Sauce (optional)

  • After cooking, remove pork and set aside.
  • Transfer sauce to a saucepan, reduce over medium heat or stir in a cornstarch slurry for a thicker glaze.
