Ingredients

  • 1 yellow onion finely diced
  • 1 green bell pepper finely diced
  • 2 cloves garlic minced
  • 1 lb dried black eyed peas soaked for at least 4 hours
  • 1 ham bone or ham hock
  • 5 cups low-sodium chicken broth
  • 2 cups chopped ham
  • 14 oz smoked rope sausage such as kielbasa or andouille, halved lengthwise and sliced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped parsley

Instructions

  • Place the finely diced onion, finely diced green bell pepper, minced garlic, soaked black eyed peas, ham bone or ham hock, and chicken broth into the slow cooker.
  • Stir gently to distribute the ingredients evenly.
  • Cover the slow cooker with the lid.
  • Cook on HIGH for 5 hours, or until the black eyed peas are tender.
  • After 5 hours, remove 1 cup of the cooked black eyed peas from the slow cooker.
  • Mash the removed peas thoroughly with a fork or potato masher until smooth.
  • Return the mashed peas to the slow cooker.
  • Add the chopped ham, sliced smoked sausage, salt, and black pepper.
  • Stir thoroughly to combine the mashed peas, meat, seasonings, and broth.
  • Cover the slow cooker again.
  • Continue cooking on HIGH for 1 additional hour, or until the ham and sausage are heated through and the flavors are fully combined.
  • Carefully remove the ham bone or ham hock from the slow cooker.
  • If desired, remove any remaining meat from the bone, chop it, and return it to the slow cooker.
  • Discard the bone.
  • Stir in the chopped parsley.
  • Taste and adjust the seasoning if necessary.
  • Serve hot over cooked rice.
