Drain the canned pink salmon, reserving 2 tbsp of the salmon juice. Set the reserved juice aside.
Place the drained salmon in a medium mixing bowl.
Add the egg and minced onion to the salmon.
Mix until the salmon, egg, and onion are fully combined and the mixture becomes sticky.
Add the all-purpose flour to the salmon mixture.
Stir until the flour is evenly incorporated and the mixture begins to hold together.
In a small bowl, combine the reserved salmon juice with the baking powder.
Stir the salmon juice and baking powder until smooth.
Add the baking powder mixture to the salmon mixture.
Stir until all ingredients are thoroughly combined.
Shape the salmon mixture into evenly sized patties.
Heat the Crisco vegetable shortening or vegetable oil in a skillet over medium heat.
Place the salmon patties carefully into the hot skillet, leaving space between each patty.
Fry the patties until the first side is golden brown.
Turn the patties carefully and cook the second side until golden brown and heated through.
Transfer the cooked salmon patties to a paper towel-lined plate to drain excess oil.
Serve warm.
