Ingredients

  • 1 lb shrimp peeled and deveined, tails on or off
  • 1 tbsp olive oil
  • 8 oz fettuccine noodles
  • 2 tbsp unsalted butter
  • 2 tsp minced garlic
  • 2 c chicken broth
  • ½ c whole milk
  • 1 ½ c heavy whipping cream
  • 1 c Parmesan cheese grated
  • Salt to taste
  • Black pepper to taste
  • Pinch of nutmeg
  • Fresh chopped parsley for garnish

Instructions

Step 1: Cook the Shrimp

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the shrimp and season with salt and black pepper to taste.
  • Cook until the shrimp are fully cooked, pink, and opaque.
  • Remove the shrimp from the skillet and set aside.

Step 2: Prepare the Garlic Butter Base

  • In the same skillet, add the unsalted butter and minced garlic.
  • Sauté for approximately 30 seconds, stirring frequently, until fragrant.

Step 3: Add the Liquid Ingredients

  • Pour in the chicken broth and whole milk.
  • Whisk until the ingredients are fully combined.

Step 4: Cook the Fettuccine

  • Place the fettuccine noodles into the skillet.
  • Cover the skillet with a lid and simmer until the noodles are cooked to the desired tenderness.
  • Stir occasionally to prevent the noodles from sticking.

Step 5: Add the Heavy Cream

  • Remove the lid and reduce the heat to medium.
  • Add the heavy whipping cream and stir to combine.
  • Continue cooking until the sauce begins to thicken.

Step 6: Add the Parmesan and Seasonings

  • Stir in the grated Parmesan cheese and a pinch of nutmeg.
  • Season with additional salt and black pepper, if desired.
  • Mix until the cheese is melted and the sauce is smooth and creamy.

Step 7: Return the Shrimp

  • Add the cooked shrimp back into the skillet.
  • Toss gently until the shrimp, noodles, and Alfredo sauce are evenly combined.

Step 8: Garnish and Serve

  • Sprinkle with fresh chopped parsley before serving.
  • Serve warm.
