Ingredients

  • 3 medium sweet potatoes peeled and cut into 1-inch cubes
  • ¾ cup plain breadcrumbs
  • 1 packet garlic herb dressing mix
  • ¼ teaspoon black pepper
  • 2 tablespoons unsalted butter melted
  • 2 tablespoons olive oil
  • cup grated Parmesan cheese

Instructions

Step 1 – Preheat the Oven

  • Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.

Step 2 – Prepare the Seasoning Mixture

  • Place the breadcrumbs, garlic herb dressing mix, and black pepper into a large resealable plastic bag. Seal the bag and gently shake to combine the ingredients thoroughly.

Step 3 – Coat the Sweet Potatoes

  • Add the diced sweet potatoes to the bag. Seal the bag securely and shake until the potatoes are evenly coated with the breadcrumb mixture.

Step 4 – Add Butter, Oil, and Cheese

  • Open the bag and add the melted butter, olive oil, and grated Parmesan cheese. Reseal the bag and shake again until the sweet potatoes are evenly coated and the seasoning mixture adheres well.

Step 5 – Arrange for Baking

  • Spread the coated sweet potatoes in a single layer on the prepared baking sheet. Ensure there is space between the pieces so they roast evenly and develop a crisp exterior.

Step 6 – Bake the Sweet Potatoes

  • Bake for 15 minutes, then remove the tray from the oven and stir the potatoes to promote even browning. Return the tray to the oven and bake for an additional 15 minutes, or until the potatoes are tender inside and golden brown on the outside.
