Ingredients

Chicken

  • 1.4 lb boneless skinless chicken thighs
  • ½ teaspoon chili powder or more, to taste
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Peaches and Sauce

  • 2 medium yellow peaches washed, cored, and sliced
  • 3 tablespoons honey or more, to taste
  • Juice of ½ fresh lemon
  • 2 tablespoons unsalted butter

Garnish (Optional)

  • Fresh thyme leaves

Instructions

Cook the Chicken

  • Season the chicken thighs evenly with chili powder, Italian seasoning, salt, and black pepper.
  • Heat a 12-inch cast-iron skillet or similar high-sided pan over medium heat for approximately 2 minutes to allow the pan to heat evenly.
  • Add the olive oil to the skillet. Place the chicken thighs in the pan and cook over medium heat for 5 minutes without moving them, allowing the chicken to sear.
  • Flip the chicken thighs, reduce the heat to medium-low, and continue cooking for an additional 5 minutes or until the chicken is fully cooked through.
  • Remove the chicken from the skillet and set aside.

Cook the Peaches

  • Using the same skillet, add the sliced peaches over medium heat. Cook gently for approximately 5 minutes, stirring occasionally, until the peaches are slightly softened but not overcooked.
  • Add the honey, lemon juice, and butter to the peaches. Stir until the butter is melted and the sauce is well combined.

Assemble the Dish

  • Return the cooked chicken to the skillet, nestling it among the peaches. Heat briefly until warmed through.
  • Remove from heat and garnish with fresh thyme, if desired. Serve immediately.
