Ingredients

  • 2 large eggs at room temperature
  • 2 –3 c chicken stock
  • tbsp soy sauce
  • 2 c cooked rice
  • 2 –3 tbsp sliced scallions for garnish
  • Kosher salt to taste
  • Freshly cracked black pepper to taste

Instructions

Prepare the Eggs

  • In a small bowl, whisk the eggs with a pinch of salt until well combined. Set aside.

Heat the Broth

  • In a medium saucepan, bring 2 cups of chicken stock and the soy sauce to a gentle simmer over medium heat. Add the cooked rice and stir to separate any clumps.

Simmer the Soup

  • Season the soup with salt and freshly cracked black pepper. Cover the saucepan partially and allow the soup to simmer for approximately 5 minutes. If the soup becomes too thick, gradually add additional stock until the desired consistency is reached.

Add the Eggs

  • Reduce the heat to low. Slowly drizzle the beaten eggs into the soup, allowing them to cook gently for 30 seconds to 1 minute, until just set.

Finish and Serve

  • Gently stir the soup to distribute the egg throughout. Garnish with sliced scallions and serve immediately.
