Ingredients

For the Crust

  • 1 sleeve approximately ⅓ of a 14 oz package graham crackers finely crushed
  • cup granulated sugar
  • cup unsalted butter melted

For the Filling

  • 1 12 oz container whipped cream cheese
  • 1 8 oz can crushed pineapple thoroughly drained
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest divided
  • 1 cup shredded coconut
  • 1 cup heavy cream

For the Topping

  • ½ cup heavy cream very cold
  • 2 teaspoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 8 oz can crushed pineapple drained

Instructions

Prepare the Crust

  • Preheat the oven to 350°F (175°C).
  • In a food processor or blender, combine the crushed graham crackers, granulated sugar, and melted butter until evenly moistened.
  • Press the mixture firmly into the bottom and slightly up the sides of an 8-inch pie pan.
  • Bake for 10 minutes. Remove from the oven and refrigerate for at least 30 minutes to cool completely.

Prepare the Filling

  • In a large bowl, whip 1 cup of heavy cream using an electric mixer until soft peaks form. Set aside.
  • Reserve ½ teaspoon of the lime zest for garnish.
  • In a separate bowl, beat the whipped cream cheese until smooth. Add the drained crushed pineapple, lime juice, and remaining lime zest, mixing until well combined.
  • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  • Pour the filling into the chilled crust and smooth the top evenly.

Prepare the Topping

  • In a clean bowl, whip ½ cup heavy cream until stiff peaks form. Add powdered sugar and vanilla extract and beat briefly to combine.
  • Spread the whipped topping evenly over the pie.
  • Garnish with the reserved lime zest and the additional crushed pineapple.

Chill

  • Refrigerate the pie for 3–4 hours, or until fully set, before slicing and serving.

To make this recipe gluten free, substitute the graham crackers with certified gluten-free graham crackers or gluten-free cookie crumbs. Ensure all packaged ingredients, including cream cheese and vanilla extract, are labeled gluten free to avoid cross-contamination.
