Ingredients

  • 1 1/2 cups rolled oats
  • 1 1/2 cups desiccated coconut
  • 1 1/3 cups raspberries fresh or frozen
  • 18 Medjool dates pitted, about 330 g after pits are removed
  • 1 tsp vanilla paste or vanilla extract
  • 2 tbsp chia seeds
  • Pinch of salt
  • 3 tbsp acai powder optional

Optional Coatings

  • Extra desiccated coconut for rolling
  • Cacao powder for rolling
  • Melted dark chocolate for drizzling, optional

Instructions

  • Place the rolled oats, desiccated coconut, raspberries, pitted Medjool dates, vanilla paste or extract, chia seeds, salt, and optional acai powder into a food processor.
  • Process the mixture until the ingredients break down and begin to stick together.
  • Stop the food processor once or twice as needed and scrape down the sides of the bowl with a spatula.
  • Continue processing until the mixture forms a sticky, rollable consistency.
  • Check the texture by pressing a small amount of the mixture between your fingers. It should hold together firmly.
  • If the mixture is too wet, add a small amount of additional rolled oats or desiccated coconut and process again.
  • If the mixture is too dry, add an extra raspberry, a soft pitted date, or a very small splash of water and process until combined.
  • Scoop portions of the mixture and roll them firmly between your hands to form balls.
  • Repeat until all of the mixture has been used. The recipe should yield approximately 20 balls, depending on size.
  • If desired, roll each ball in extra desiccated coconut or cacao powder.
  • Alternatively, drizzle the balls with melted dark chocolate.
  • Place the finished bliss balls in an airtight container.
  • Chill until ready to serve.
