Ingredients

For the Salad

  • 2 hearts romaine lettuce washed and chopped
  • 1 avocado diced
  • 2 small plum tomatoes diced
  • 1 cup grilled corn or whole kernel corn
  • 1 cucumber diced
  • 1 small red onion chopped
  • 1 carrot peeled and shredded

For the Dressing

  • 1/4 cup extra virgin olive oil
  • 2 to 3 tbsp red wine vinegar
  • 1 tsp granulated sugar
  • Salt to taste
  • Black pepper to taste

Instructions

  • Wash the romaine lettuce thoroughly.
  • Dry the lettuce completely with a salad spinner or clean kitchen towel.
  • Chop the romaine lettuce into bite-sized pieces.
  • Place the chopped romaine lettuce in the bottom of a large salad bowl.
  • Dice the avocado into small, even pieces.
  • Dice the plum tomatoes.
  • Dice the cucumber.
  • Chop the red onion finely.
  • Peel and shred the carrot.
  • If using grilled corn, remove the kernels from the cob.
  • If using canned or frozen whole kernel corn, drain or thaw it before adding it to the salad.
  • Arrange the avocado, tomatoes, corn, cucumber, red onion, and shredded carrot over the romaine lettuce.
  • In a small bowl or measuring cup, combine the extra virgin olive oil, red wine vinegar, and granulated sugar.
  • Whisk until the sugar is fully dissolved.
  • Season the dressing with salt and black pepper to taste.
  • Drizzle the dressing evenly over the prepared salad.
  • Gently toss the salad until the lettuce and vegetables are evenly coated with the dressing.
  • Taste and adjust the seasoning with additional salt, pepper, vinegar, or olive oil if needed.
  • Serve immediately for the best texture and freshness.
