Peanut Chicken Salad Wraps

Ingredients

  • 1 1/2 tbsp sugar
  • 1 tbsp minced peeled fresh ginger
  • 3 tbsp fresh lime juice
  • 1 tbsp soy sauce
  • 1/4 tsp salt
  • 1/4 tsp ground red pepper
  • 1 garlic clove minced
  • 1/4 c crunchy peanut butter
  • 2 tbsp water
  • 3 tbsp chopped fresh cilantro
  • 1 c chopped seeded peeled cucumber
  • 3/4 c chopped red bell pepper
  • 1 tsp peanut oil
  • 6 boneless skinless chicken breast halves 4 oz each, cut into bite-sized pieces
  • 1/2 tsp red pepper flakes
  • 8 flour tortillas 8-inch size
  • 4 c chopped romaine lettuce

Instructions

Prepare the dressing.

  • In a large mixing bowl, whisk together the sugar, ginger, lime juice, soy sauce, salt, ground red pepper, and minced garlic until well combined.

Add the peanut butter.

  • Add the crunchy peanut butter and water to the bowl. Whisk until the mixture is smooth and fully blended.

Incorporate the vegetables.

  • Stir in the chopped cilantro, cucumber, and red bell pepper. Set the mixture aside.

Cook the chicken.

  • Heat the peanut oil in a wok or large heavy skillet over medium-high heat. Sprinkle the chicken pieces with red pepper flakes and sauté until browned and cooked through.

Combine the filling.

  • Add the cooked chicken to the peanut butter mixture and stir until evenly coated.

Warm the tortillas.

  • Warm the tortillas according to package directions.

Assemble the wraps.

  • Spoon approximately 1/2 cup of the chicken mixture onto each tortilla. Top each with about 1/2 cup chopped romaine lettuce.

Roll and serve.

  • Roll the tortillas tightly around the filling and serve immediately.

Notes
