Ingredients

  • 4 tbsp salted butter
  • 3/4 cup smooth peanut butter
  • 10 oz mini marshmallows
  • 7 cups cornflakes
  • 1 oz mini marshmallows for folding in at the end
  • 1/3 cup peanut butter chips optional
  • 2 tbsp peanut butter chips for drizzling
  • 1/2 tsp vegetable oil or canola oil

Instructions

  • Line a baking sheet with parchment paper.
  • Place a large pot over medium-low heat.
  • Add the salted butter and smooth peanut butter to the pot.
  • Stir until the butter and peanut butter are fully melted and smooth.
  • Add 10 oz mini marshmallows to the pot.
  • Stir constantly until the marshmallows are completely melted and the mixture is smooth.
  • Remove the pot from the heat.
  • Add the cornflakes to the melted peanut butter and marshmallow mixture.
  • Stir gently until the cornflakes are evenly coated.
  • Add the remaining 1 oz mini marshmallows and the optional 1/3 cup peanut butter chips.
  • Fold gently until just combined. Do not overmix.
  • Spray a large cookie scoop with nonstick cooking spray.
  • Scoop 10 equal portions of the mixture onto the prepared baking sheet.
  • Lightly grease your fingers.
  • Gently shape and flatten each portion to approximately 1 inch thick. Do not pack the cookies too firmly.
  • Place 2 tbsp peanut butter chips and 1/2 tsp vegetable or canola oil in a microwave-safe bowl.
  • Microwave in 30-second increments, stirring after each interval, until the mixture is fully melted and smooth.
  • Transfer the melted peanut butter chip mixture to a zip-top bag.
  • Cut a small opening in one corner of the bag.
  • Drizzle the melted peanut butter mixture over each cookie.
  • Allow the cookies to set for 20 to 30 minutes before serving.

Notes

To make these Peanut Butter Cornflake Cookies gluten free, use certified gluten-free cornflakes.
Verify that the peanut butter, mini marshmallows, peanut butter chips, salted butter, and oil are labeled gluten free.
Check the cornflake cereal carefully, as many standard cornflake brands contain malt flavoring or may have gluten cross-contact.
Use clean cookware, measuring cups, spatulas, scoops, parchment paper, and baking sheets to prevent gluten cross-contact.
