Preheat the oven to 350°F.
Line two baking sheets with parchment paper and set aside.
In the bowl of an electric mixer fitted with the paddle attachment, add 1 cup creamy peanut butter and 1/2 cup honey.
Beat the peanut butter and honey together until smooth and fully combined.
Add the egg to the peanut butter mixture.
Beat until the egg is fully incorporated and the mixture is smooth.
Add the old-fashioned oatmeal and baking soda.
Mix on low speed until just combined. Do not overmix.
Using a 1/2-ounce cookie scoop, portion heaping tablespoon-sized amounts of dough onto the prepared baking sheets.
Space the dough portions a few inches apart to allow room for baking.
Gently flatten the top of each dough portion with the palm of your hand.
Bake for 7 to 8 minutes, or until the cookies are set and the tops begin to crack slightly.
Remove the baking sheets from the oven.
Allow the cookies to cool on the baking sheets for a few minutes.
Transfer the cookies to a wire rack and allow them to cool completely.
Once fully cooled, turn all cookies over so the flat bottoms face upward.
Spread the bottoms of half of the cookies with slightly more than 1 tsp creamy peanut butter.
Spread the bottoms of the remaining cookies with slightly more than 1 tsp fruit spread or jam.
Place each cookie with fruit spread upside down onto a cookie with peanut butter.
Press gently to form a sandwich.
Serve immediately, or store according to the storage instructions.
