Ingredients

  • 1 box white cake mix
  • 1/3 c softened butter
  • 2 large eggs divided
  • 29 oz can sliced peaches drained
  • 12 oz cream cheese softened
  • 1/4 c granulated sugar
  • 1 tsp vanilla extract

Instructions

Preheat the oven.

  • Preheat the oven to 350 degrees.

Prepare the crumb mixture.

  • In a mixing bowl, combine the white cake mix, softened butter, and 1 large egg. Mix with a fork until a crumbly mixture forms.

Reserve a portion of the topping.

  • Set aside 1 1/2 cups of the crumb mixture for the topping.

Form the crust.

  • Press the remaining crumb mixture evenly into a well-greased 9×13 baking dish.

Prebake the crust.

  • Bake the crust for 10 minutes.

Add the peaches.

  • Remove the dish from the oven and spread the drained peaches evenly over the prebaked crust.

Prepare the cream cheese layer.

  • In a mixing bowl, beat together the softened cream cheese, granulated sugar, vanilla extract, and the remaining large egg until smooth and creamy.

Add the cream cheese mixture.

  • Spread the cream cheese mixture evenly over the peaches.

Add the crumb topping.

  • Sprinkle the reserved crumb mixture evenly over the top.

Bake the bars.

  • Return the dish to the oven and bake for 30 minutes, or until the topping is lightly golden and the filling is set.

Cool before serving.

  • Allow the bars to cool before slicing and serving.

Notes

To make these Peachy Keen Bars gluten free, replace the white cake mix with a certified gluten-free white cake mix.
