Ingredients

  • 1 tbsp olive oil
  • 1 small onion peeled and chopped
  • 1 lb breakfast sausage mild flavor
  • 4 large butter croissants or 8 small croissants
  • 1 c shredded cheddar cheese
  • 6 large eggs
  • 1/2 c heavy whipping cream
  • 3 c milk whole milk recommended, divided
  • 1/2 tsp dry mustard powder
  • 1/2 tsp salt plus additional for the gravy to taste
  • 1/2 tsp black pepper plus additional for the gravy to taste
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 2 tbsp butter
  • 3 tbsp all-purpose flour

Instructions

  • Start by heating up some olive oil in a skillet. Once it's hot add the chopped onions. Sauté them until they become soft and translucent. Next, add the sausage to the skillet. Cook it until it turns brown. Remember to drain the fat from the sausage. Make sure to save some for later use, in making gravy. Allow the mixture to cool down slightly.
  • Now take some croissants. Tear them into pieces. In a bowl combine these torn pieces with the cooked sausage mixture and some cheese. Mix everything together well before spreading it in a greased 9x13-inch baking dish.
  • In another bowl whisk together eggs, cream, half a cup of milk and your choice of spices. Once everything is well combined pour this mixture over the croissant sausage mixture in the baking dish. Cover it up with a lid or some plastic wrap and refrigerate overnight.
  • The day preheat your oven to 350°F (175°C). Place your casserole dish in the oven. Bake for about 35 to 45 minutes until it turns brown on top.
  • While your casserole is baking you can prepare some gravy as well. In a pan or saucepan, melt the butter along with the reserved fat from earlier. Stir in flour. Cook for a minute while continuously stirring. Gradually add 2 ½ cups of milk into this mixture while stirring constantly until it thickens up nicely. Season with salt and pepper according to your taste preferences.
  • Once your casserole is ready out of the oven serve it hot alongside your gravy, on the side.
