Ingredients

For the Crust

  • 16 Oreo cookies

For the Filling

  • 16 oz cream cheese softened
  • 1/2 c sugar
  • 2 whole eggs
  • 1 tsp vanilla extract
  • 3/4 c Oreo cookie crumbs and chunks divided (about 6 Oreos), plus extra for topping if desired

Instructions

  • Preheat the oven to 350°F. Line a regular muffin pan with 16 paper liners. Place one whole Oreo cookie into the bottom of each liner, then set the pan aside.
  • In a large mixing bowl, combine the softened cream cheese, sugar, eggs, and vanilla extract. Using an electric mixer, beat the mixture for 2 to 3 minutes, or until smooth and creamy.
  • Add the Oreo cookie crumbs and chunks to the cheesecake mixture. Fold them in gently with a spatula until evenly combined. Reserve a few tablespoons of the cookie crumbs for topping, if desired.
  • Spoon the cheesecake batter evenly over the Oreo cookies in the prepared muffin pan, using approximately 2 tablespoons of batter for each cup. Sprinkle the tops with the reserved Oreo crumbs.
  • Bake for 14 to 16 minutes, or until the centers are set. Do not overbake.
  • Allow the cheesecakes to cool in the pan for at least 30 minutes. Remove the paper wrappers if desired, then refrigerate until ready to serve. For the best texture, chill the cheesecake bites for at least 2 hours before serving.
  • If desired, top with whipped cream and additional crushed Oreo cookies before serving.

Notes

To make these Oreo Crust Mini Cheesecake Bites gluten free, use certified gluten-free chocolate sandwich cookies in place of regular Oreos, since traditional Oreos are not gluten free in all varieties and regions.
