Ingredients

  • 3 tbsp oil
  • 1/4 cup onion finely chopped
  • 1 lb boneless chicken cut into strips or cubes
  • 1 tsp ginger finely minced
  • 1 tsp garlic finely minced
  • 2 1/4 cups low-sodium chicken broth
  • 4 tsp Cajun seasoning
  • Salt to taste
  • Pepper to taste
  • 1 cup uncooked rice
  • 1/3 cup green pepper cut into small strips
  • 1/3 cup red pepper cut into small strips
  • 1/3 cup frozen corn
  • 2 tbsp cilantro roughly chopped
  • Sliced jalapeños for garnish, optional

Instructions

  • Heat the oil in a nonstick pot over medium-high heat.
  • Add the finely chopped onion to the pot.
  • Cook the onion until it becomes slightly soft and translucent, stirring occasionally.
  • Add the minced ginger, minced garlic, and boneless chicken pieces.
  • Cook until the chicken is lightly golden brown on the outside.
  • Pour in the low-sodium chicken broth.
  • Add the Cajun seasoning, salt, and pepper.
  • Stir until the seasoning is evenly distributed throughout the broth.
  • Add the uncooked rice, green pepper, red pepper, and frozen corn.
  • Mix thoroughly until all ingredients are evenly combined.
  • Cover the pot with a lid.
  • Reduce the heat to medium.
  • Cook for 20 to 25 minutes, or until the rice is fully cooked and the liquid has been absorbed.
  • Check the rice near the end of the cooking time. If the rice is still firm, add a small amount of additional broth or water, cover, and continue cooking until tender.
  • Once the rice is cooked, remove the lid.
  • Sprinkle the chopped cilantro over the chicken and rice.
  • Gently mix until the cilantro is evenly incorporated.
  • Garnish with sliced jalapeños, if desired.
  • Serve warm.
