Heat the oil in a nonstick pot over medium-high heat.
Add the finely chopped onion to the pot.
Cook the onion until it becomes slightly soft and translucent, stirring occasionally.
Add the minced ginger, minced garlic, and boneless chicken pieces.
Cook until the chicken is lightly golden brown on the outside.
Pour in the low-sodium chicken broth.
Add the Cajun seasoning, salt, and pepper.
Stir until the seasoning is evenly distributed throughout the broth.
Add the uncooked rice, green pepper, red pepper, and frozen corn.
Mix thoroughly until all ingredients are evenly combined.
Cover the pot with a lid.
Reduce the heat to medium.
Cook for 20 to 25 minutes, or until the rice is fully cooked and the liquid has been absorbed.
Check the rice near the end of the cooking time. If the rice is still firm, add a small amount of additional broth or water, cover, and continue cooking until tender.
Once the rice is cooked, remove the lid.
Sprinkle the chopped cilantro over the chicken and rice.
Gently mix until the cilantro is evenly incorporated.
Garnish with sliced jalapeños, if desired.
Serve warm.
