  • 1 10.5-ounce can cream of chicken soup
  • ½ cup cottage cheese
  • ½ cup sour cream
  • 4 oz cream cheese softened to room temperature
  • tsp Creole seasoning
  • ½ tsp onion powder
  • 1 tsp garlic powder divided
  • 5 cups cooked rotisserie chicken shredded
  • 1 tbsp fresh parsley finely chopped
  • 30 buttery round crackers such as Ritz, crushed
  • 4 tbsp unsalted butter melted
  • 1 cup shredded mozzarella cheese
  • 1 tsp sliced scallions optional, for garnish

Instructions

Preheat the Oven

  • Preheat the oven to 350°F (175°C). Lightly grease an 11×7-inch or 9-inch square baking dish and set aside.

Prepare the Creamy Base

  • In a medium mixing bowl, combine the cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and ½ teaspoon of the garlic powder. Stir until the mixture is smooth and fully blended.

Incorporate the Chicken

  • Add the shredded chicken and chopped parsley to the bowl. Gently fold until the chicken is evenly coated with the creamy mixture.

Prepare the Cracker Topping

  • In a separate bowl, mix the crushed crackers with the melted butter and remaining ½ teaspoon garlic powder until evenly moistened.

Assemble the Casserole

  • Spoon the chicken mixture evenly into the prepared baking dish. Sprinkle the mozzarella cheese evenly over the top, then finish with the cracker mixture.

Bake

  • Place the dish on a foil-lined baking sheet. Bake uncovered for approximately 35 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.

Finish and Serve

  • Remove from the oven and allow the casserole to rest for a few minutes before serving. Garnish with sliced scallions if desired.
