Ingredients

  • 1 package flavored instant mashed potatoes prepared according to package directions
  • 1 ½ lb lean ground beef
  • ¾ c diced onion
  • 1 ½ tbsp Worcestershire sauce
  • 1 c bread crumbs
  • 1 large egg
  • c bacon bits
  • ¾ c chopped green onions
  • 2 c freshly shredded cheddar cheese

Instructions

Preheat the Oven

  • Preheat the oven to 400°F (205°C). Lightly grease a baking dish and set aside.

Prepare the Mashed Potatoes

  • Prepare the instant mashed potatoes according to the package instructions. Set aside until ready to assemble the casserole.

Prepare the Meatloaf Base

  • In a large mixing bowl, combine the ground beef, diced onion, Worcestershire sauce, and bread crumbs. Mix gently by hand until evenly incorporated. Add the egg and mix again until fully combined.

Assemble the Casserole

  • Transfer the meat mixture into the prepared baking dish, pressing it into an even layer. Spread the prepared mashed potatoes evenly over the meat layer.

Add the Toppings

  • Sprinkle the shredded cheddar cheese evenly over the mashed potatoes. Top with the bacon bits and chopped green onions.

Bake

  • Cover the baking dish with aluminum foil and bake for 40 minutes. Remove the foil and continue baking for an additional 15 minutes, or until the cheese is melted, lightly browned, and the meat is fully cooked.

Rest and Serve

  • Remove the casserole from the oven and allow it to rest for 10 minutes before serving to allow the layers to set.

To make this recipe gluten free, substitute the bread crumbs with gluten-free bread crumbs and ensure the instant mashed potatoes and Worcestershire sauce are labeled gluten free, as some brands may contain wheat-based additives.
