Lava Brownies

These Lava Brownies are rich, fudgy, and filled with melted chocolate pockets. Made with browned butter, dark chocolate, and cocoa powder, they bake with a crisp top and gooey center for an indulgent dessert.

Ingredients

  • 1 1/2 sticks salted butter
  • 4 oz 70% dark chocolate bar chopped
  • 3 eggs
  • 1/2 c white sugar
  • 1/2 c dark brown sugar
  • 1 tbsp pure vanilla extract
  • 1/2 c Dutch-process cocoa powder
  • 1/2 c all-purpose flour
  • 1/2 tsp salt
  • 1 c dark chocolate chips Semi-sweet chocolate chips may be used if preferred

Instructions

Prepare the Pan and Oven

  • Preheat the oven to 350°F. Grease an 8x8-inch baking pan and line it with parchment paper. Set aside. Place the chopped chocolate in a medium heatproof bowl and set aside.

Brown the Butter

  • Place the butter in a small saucepan over medium-low heat. Stir frequently for 5 to 6 minutes, until the butter foams and the foam turns light brown. Remove from the heat immediately and pour the hot browned butter over the chopped chocolate. Stir until the chocolate is completely melted and smooth. Set aside.

Combine the Dry Ingredients

  • In a small bowl, sift together the cocoa powder, flour, and salt. Stir gently to combine, then set aside.

Whisk the Eggs and Sugars

  • In a large mixing bowl, whisk together the eggs, white sugar, dark brown sugar, and vanilla extract until the mixture is frothy and well combined.

Prepare the Batter

  • Slowly pour the melted chocolate and browned butter mixture into the egg mixture, whisking until fully incorporated. Add the dry ingredient mixture and stir until combined. Fold in the chocolate chips.

Fill the Pan

  • Pour the batter into the prepared baking pan and spread it evenly.

Bake

  • Bake for 15 minutes. Remove the pan from the oven and gently tap or drop it against a hard surface 5 times. Return the pan to the oven and bake for an additional 13 minutes for a gooier center. For brownies that are more set, bake for an additional 15 to 18 minutes instead.

Cool

  • Remove the brownies from the oven and place the pan on a wire rack. Allow the brownies to cool completely to room temperature in the pan.

Slice and Serve

  • Once cooled, lift the brownies from the pan using the parchment paper. Cut into squares and serve.

Notes

To make these Lava Brownies gluten free, replace the all-purpose flour with an equal amount of a 1:1 gluten-free flour blend that is designed for baking. Choose a blend that already contains xanthan gum, or add it if needed according to the package directions. Make sure the cocoa powder, chocolate bar, chocolate chips, and vanilla extract are certified gluten free, since some packaged chocolate products may contain traces of gluten or be processed in shared facilities. The texture should remain rich and fudgy, though the brownies may be slightly more delicate when warm, so allow them to cool fully before slicing.
