Ingredients

  • 5 slices bacon chopped
  • 2 lb ground beef
  • ½ cup yellow onion finely chopped
  • 1 tablespoon garlic minced
  • 1 15 oz can diced tomatoes drained
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • 32 oz beef broth
  • 3 tablespoons tomato paste
  • 2 teaspoons yellow mustard
  • 8 oz cream cheese cubed and softened
  • 1 cup cheddar cheese shredded

Instructions

  • Heat a large saucepan or Dutch oven over medium heat and lightly coat with cooking spray.
  • Add the chopped bacon and cook until crisp. Remove the bacon from the pan and set aside.
  • Carefully drain the bacon grease, reserving approximately 1 tablespoon in the pot.
  • Add the ground beef, chopped onion, and minced garlic to the pot. Cook, stirring occasionally, until the beef is fully browned and the onion is softened. Drain and discard any excess grease.
  • Stir in the tomato paste, mustard, beef broth, drained diced tomatoes, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and paprika. Mix thoroughly and bring the soup to a gentle simmer.
  • Allow the soup to simmer uncovered over medium heat for 10 minutes, stirring occasionally to ensure even flavor distribution.
  • Reduce the heat to low. Add the softened cream cheese, shredded cheddar cheese, and cooked bacon. Stir continuously until the cheeses are fully melted and the soup is smooth and creamy.
  • Remove from heat and serve immediately.

This recipe is naturally gluten-free when prepared with certified gluten-free Worcestershire sauce and beef broth, as some brands may contain gluten. Always verify labels on packaged ingredients. No additional substitutions are required.
