Jalapeno Popper Casserole

Ingredients

  • 2 lb tater tots
  • 16 oz cream cheese softened
  • 2 boneless, skinless chicken breasts cooked and shredded
  • 1 cup sour cream
  • 1 lb bacon cooked and crumbled
  • 2 cups Mexican blend cheese divided
  • 6 green onions chopped and divided
  • 6 jalapeno peppers deseeded and finely chopped

Instructions

  • Preheat the oven to 425°F.
  • Grease a 9x13-inch baking dish thoroughly.
  • Arrange the tater tots in an even layer across the bottom of the prepared baking dish.
  • Place the baking dish in the preheated oven and bake the tater tots for 15 minutes.
  • While the tater tots are baking, cook the bacon until crisp.
  • Drain the cooked bacon, if necessary, and crumble it into small pieces.
  • In a large mixing bowl, combine the softened cream cheese and sour cream.
  • Add three-fourths of the crumbled bacon to the bowl.
  • Add 1 1/2 cups of the Mexican blend cheese.
  • Add half of the chopped green onions.
  • Add the deseeded and finely chopped jalapeno peppers.
  • Stir the mixture until all ingredients are evenly combined.
  • Fold the cooked, shredded chicken into the cream cheese mixture until fully incorporated.
  • Remove the baking dish from the oven after the tater tots have baked for 15 minutes.
  • Spread the chicken and jalapeno cream cheese mixture evenly over the baked tater tots.
  • Sprinkle the remaining 1/2 cup of Mexican blend cheese over the top.
  • Add the remaining chopped green onions and remaining crumbled bacon.
  • Return the baking dish to the oven.
  • Bake for an additional 20 minutes, or until the casserole is hot, the cheese is melted, and the top is lightly golden.
  • Remove the casserole from the oven and allow it to rest for several minutes before serving.
  • Serve warm.

To make this Jalapeno Popper Casserole gluten free, use certified gluten-free tater tots, as some frozen potato products may contain wheat-based coatings or cross-contact warnings.
