Ingredients

  • 1 to 2 thin boneless chicken breasts or chicken breasts sliced in half widthwise
  • 1 tbsp olive oil
  • 1 tsp seasoned salt or salt-free seasoning blend

Instructions

  • Wrap the toaster oven tray with non-stick aluminum foil and place it on the lowest rack in the toaster oven. Preheat the toaster oven to 350°F for 5 minutes.
  • If the chicken breasts are thick, slice them in half widthwise so they are thinner and more even in thickness.
  • Pat the chicken dry with paper towels. Brush both sides with olive oil.
  • Sprinkle the chicken evenly with the seasoned salt or seasoning blend.
  • Arrange the chicken on the prepared tray in a single layer, ensuring the pieces do not overlap.
  • Bake for 15 to 20 minutes if the chicken breasts have been sliced in half, or 30 to 35 minutes if left whole. Turn the chicken halfway through the cooking time. Cooking time may vary depending on the thickness of the chicken and whether it contains any bone.
  • Cook until the thickest part of the chicken reaches an internal temperature of 165°F.
  • Remove the chicken from the toaster oven and allow it to rest for 5 minutes before slicing and serving.

Notes

This recipe can be naturally gluten free, but it is important to check the seasoning blend carefully. Some seasoned salt mixtures may contain additives or anti-caking agents that include gluten or are processed in facilities with gluten. Choose a certified gluten-free seasoning blend if needed. Also make sure the aluminum foil, utensils, tray, and toaster oven surfaces are clean and free from cross-contact if you are preparing this for someone with celiac disease or a strong gluten intolerance.
