Ingredients

  • 3 c all-purpose flour
  • 3 tsp baking soda
  • 2 tsp cinnamon
  • ½ c 1 stick unsalted butter, room temperature
  • ½ c honey
  • 1 ½ c granulated sugar
  • 2 large eggs
  • 2 ½ c unsweetened applesauce

Instructions

  • Preheat your oven to 350°F (175°C). Make sure to spray your baking pans, with nonstick spray.
  • In a bowl combine 3 cups of flour, 3 teaspoons of baking soda and 2 teaspoons of cinnamon.
  • In another bowl use a mixer to blend ½ cup of unsalted butter, 1 ½ cups of granulated sugar and ½ cup of honey.
  • Add and beat in 2 large eggs to the butter mixture.
  • Mix in 2 ½ cups of applesauce.
  • Gradually incorporate the dry ingredients into the wet mixture until just mixed together.
  • Pour the batter into the pans. Use around 1 cup for each pan or 3 cups for each loaf pan.
  • Bake in the oven for 30 to 35 minutes for pans and about 35 to 45 minutes for loaf pans or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool for minutes in the pans then transfer them to a wire rack to cool completely.
  • Once cooled down completely wrap the cake tightly to maintain moisture. Store it at room temperature, for around 5 to 7 days.
