Homemade Amish Hash Browns

Ingredients

  • 2 1/2 lb potatoes
  • 1 tbsp olive oil
  • 2 tsp onion powder
  • 1 1/2 tsp garlic powder
  • 1 tsp dried dill
  • 3/4 to 1 tsp sea salt

Instructions

  • Preheat the oven to 400°F.
  • Line a baking tray with parchment paper.
  • Wash and peel the potatoes.
  • Shred the potatoes using a food processor or a box grater.
  • Transfer the shredded potatoes to a bowl or colander.
  • Rinse the shredded potatoes thoroughly with cold water until the water runs nearly clear.
  • Drain the potatoes well.
  • Squeeze as much liquid as possible from the shredded potatoes using clean hands, a clean kitchen towel, cheesecloth, or a potato ricer.
  • Transfer the dried shredded potatoes to a large mixing bowl.
  • Add the olive oil, onion powder, garlic powder, dried dill, and sea salt.
  • Mix until the potatoes are evenly coated with the oil and seasonings.
  • Portion approximately 1/4 cup of the potato mixture for each hash brown.
  • Place each portion onto the prepared baking tray.
  • Press each portion firmly into a round patty. A ring mold may be used for a more uniform shape.
  • If a ring mold is used, pack the potato mixture firmly into the mold, press it down, and carefully remove the mold.
  • If shaping by hand, press each portion firmly with a spatula until compact.
  • Place the baking tray in the preheated oven.
  • Bake for 30 minutes.
  • Remove the tray from the oven.
  • Gently flip each hash brown round using a spatula.
  • Return the tray to the oven.
  • Bake for an additional 15 to 20 minutes, or until the hash browns are golden, crisp on the outside, and tender inside.
  • Remove the hash browns from the oven.
  • Allow them to cool slightly before serving.
  • Serve warm with plant-based sour cream and fresh herbs, if desired.
