Instructions

Prepare the oven.

  • Preheat the oven to 350º F.

Combine the dry ingredients.

  • In a medium mixing bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon, if using.

Cream the butter, peanut butter, and sugar.

  • In a large bowl or stand mixer, cream together the butter, peanut butter, and granulated sugar for 3 to 4 minutes, or until the mixture is light and fluffy.

Add the egg and vanilla.

Shape the cookies.

Arrange on the baking sheet.

  • Transfer the coated cookie dough balls to a baking sheet, spacing them evenly apart.

Bake the cookies.

  • Bake for 12 to 14 minutes, rotating the baking sheet halfway through, until the cookies are just firm to the touch but still soft in the centers.

Cool before serving.

  • Remove the cookies from the oven and allow them to cool for 15 minutes before serving or transferring to storage containers.

Notes

To make these Holiday Peanut Butter Crinkles gluten free, replace the all-purpose flour with a certified gluten-free 1:1 baking flour blend that contains xanthan gum. Also verify that the baking powder, vanilla extract, powdered sugar, and peanut butter are certified gluten free if necessary for strict dietary needs. Because gluten-free dough can sometimes be slightly softer, chilling the dough briefly before rolling may help if needed.
