Hobo Casserole

Ingredients

  • Nonstick cooking spray or 1–2 tbs butter
  • 1 lb ground beef 80/20
  • 1 tsp Cajun seasoning
  • 1 tsp black pepper divided
  • 1 tbs vegetable oil
  • 1 c onion finely diced
  • 1 medium red bell pepper diced
  • 1 tbs garlic minced
  • 4 medium potatoes thinly sliced
  • 3 c shredded cheese cheddar, mozzarella, Monterey Jack, or pepper jack
  • 1 tsp salt
  • 1 can 10.5 oz condensed cream of chicken soup
  • 1 can 10.5 oz condensed cream of potato soup
  • ½ c milk
  • ¼ c sour cream
  • 2 tsp Worcestershire sauce
  • 3 oz French fried onions

Optional Garnish

  • ¼ c green onions thinly sliced
  • 2 tbs fresh parsley finely chopped

Instructions

  • Preheat the oven to 350°F (177°C). Grease a 9×13-inch baking dish with nonstick cooking spray or butter and set aside.
  • In a large skillet over medium-high heat, cook the ground beef with Cajun seasoning and ½ teaspoon black pepper, breaking the meat into crumbles, until fully cooked and no longer pink. Add the diced onion and red bell pepper and sauté for 10–12 minutes, or until softened. Stir in the minced garlic and cook for 1 additional minute until fragrant. Remove from heat.
  • Arrange one layer of sliced potatoes in the bottom of the prepared baking dish. Season with ½ teaspoon salt and ¼ teaspoon black pepper. Sprinkle with 1 cup mozzarella and ½ cup cheddar cheese. Repeat with a second layer of potatoes, seasoning, and cheese.
  • Evenly spread the cooked ground beef and vegetable mixture over the potato layers.
  • In a medium bowl, whisk together the cream of chicken soup, cream of potato soup, milk, sour cream, and Worcestershire sauce until smooth. Pour the mixture evenly over the casserole.
  • Cover tightly with aluminum foil and bake for 1½ hours, or until the potatoes are tender.
  • Remove the foil, sprinkle the fried onions evenly over the top, and place the dish under the broiler for several minutes until the topping is golden brown. Allow the casserole to rest for 7–10 minutes before garnishing and serving.

Notes

To make this Hobo Casserole gluten free, use certified gluten-free condensed soups, Worcestershire sauce, Cajun seasoning, and fried onions. Verify all packaged ingredients for gluten-free labeling, as some brands contain wheat-based thickeners.
