Ingredients

  • 1 lb lean ground beef
  • 1 lb ground turkey breast or ground chicken
  • ½ c Panko bread crumbs
  • 1 large egg
  • 1 carrot cut in chunks
  • 1 small onion cut in chunks
  • ¼ c BBQ sauce or ketchup/chili sauce as alternatives
  • 2 tsp mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp fresh parsley or 2 tsp dried parsley
  • 1 tsp salt or more to taste
  • ½ tsp pepper

Topping:

  • ¾ c BBQ sauce or a mix of BBQ sauce and chili sauce

Instructions

  • Using a blender combine the egg, carrot, onion, BBQ sauce, mustard, Worcestershire sauce, parsley and pepper. Blend until you achieve a fairly smooth mixture, with chunks.
  • In a bowl thoroughly mix together the blended veggie mixture with the ground beef, turkey and Panko breadcrumbs until everything is evenly combined.
  • On a pan lined with foil and sprayed with cooking spray shape the mixture into a loaf that measures 4 inches wide and 3 inches high. Cover it with foil to create a seal. Place it in the oven. Bake for 1 hour.
  • Remove the foil cover from the meatloaf. Spread BBQ sauce over it, as a topping. Continue baking for 15 to 30 minutes or until it reaches a temperature of 160°F.
  • Allow the meatloaf to rest for about 10 minutes before slicing it up and serving. Enjoy your meal!
