Ingredients

For the Chicken

  • 3 tbsp olive oil
  • 2 tbsp dry white wine
  • 2 tbsp fresh lime juice
  • 1 tbsp white wine Worcestershire sauce
  • 1 1/2 tsp dried basil
  • 4 boneless chicken breast halves

For the Peach and Apple Salsa

  • 2 large ripe but firm peaches
  • 1 small Granny Smith apple peeled, cored, and chopped
  • 1/2 c chopped fresh cilantro
  • 3 1/2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cinnamon

Instructions

Prepare the marinade.

  • In a large bowl, combine the olive oil, dry white wine, fresh lime juice, white wine Worcestershire sauce, and dried basil. Mix until well blended.

Marinate the chicken.

  • Add the chicken breasts to the marinade and turn to coat evenly. Cover and refrigerate for at least 1 hour.

Preheat the grill.

  • Preheat the grill to medium-high heat.

Cook the chicken.

  • Remove the chicken from the marinade. Grill for approximately 5 minutes per side, or until the chicken is just cooked through and a meat thermometer inserted into the thickest portion reads 160°F.

Rest and serve the chicken.

  • Transfer the grilled chicken to serving plates and top with the prepared salsa.

Peach and Apple Salsa Directions

    Blanch the peaches.

    • Bring a medium saucepan of water to a boil over high heat. Add the peaches and cook for 30 seconds.

    Cool the peaches.

    • Using a slotted spoon, transfer the peaches to a bowl of cold water. Drain well.

    Peel and chop the peaches.

    • Peel the peaches and chop them coarsely. Place them in a large bowl.

    Prepare the salsa.

    • Add the chopped apple, cilantro, honey, fresh lime juice, allspice, and cinnamon to the peaches. Stir gently until evenly combined.

    Chill until needed.

    • Cover the salsa and refrigerate until ready to serve.
