Ingredients

  • 4 tbsp butter ½ stick
  • 1 8 oz package cream cheese
  • cup milk
  • 1 15 oz can sweet corn drained
  • 1 7 oz can fire-roasted green chiles diced
  • 1 tsp garlic powder
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

Prepare the Oven and Baking Dish

  • Preheat the oven to 325°F (163°C). Lightly grease an 8×8-inch baking dish with butter or nonstick cooking spray to prevent the casserole from sticking during baking.

Prepare the Creamy Base

  • In a large saucepan over medium heat, combine the butter, cream cheese, and milk. Stir or whisk continuously as the mixture warms. Continue heating until the cream cheese has fully melted and the mixture becomes smooth and creamy.

Add the Remaining Ingredients

  • Stir the drained sweet corn and the diced fire-roasted green chiles into the saucepan. Add the garlic powder, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated and the corn is coated in the creamy sauce.

Transfer the Mixture to the Baking Dish

  • Pour the corn mixture into the prepared baking dish and spread it evenly using a spatula.

Bake the Casserole

  • Place the baking dish in the preheated oven and bake for approximately 30 minutes, or until the casserole is heated through and gently bubbling around the edges.

Serve
