Georgia Peach Cobbler

Ingredients

  • 1/2 c unsalted butter melted
  • 1 c flour
  • 1 c granulated sugar
  • 1 tbs baking powder
  • 1 c milk
  • 2 tsp vanilla extract
  • 3 cans sliced peaches rinsed and drained well
  • 1 c brown sugar
  • Squeeze of fresh lemon juice

Instructions

  • Preheat the oven to 375°F.
  • Pour the melted butter into the center of a 9x13 baking dish. Do not spread the butter around the dish.
  • In a mixing bowl, combine the flour, granulated sugar, baking powder, milk, and vanilla extract. Stir until the batter is smooth.
  • Pour the batter into the center of the baking dish over the melted butter. Do not stir or spread the batter.
  • In a skillet over medium heat, combine the sliced peaches, brown sugar, and a squeeze of fresh lemon juice.
  • Cook the peach mixture just until the brown sugar has dissolved and the peaches are well coated.
  • Pour the peach mixture into the center of the baking dish over the batter. Do not stir.
  • Bake for approximately 45 minutes, or until the cobbler is golden brown and cooked through.
  • Remove from the oven and allow it to cool slightly before serving.

Notes

To make this recipe gluten free, replace the all-purpose flour with a certified gluten-free 1:1 baking flour blend. Also confirm that the baking powder, vanilla extract, and canned peaches are labeled gluten free, as ingredients and manufacturing practices may vary by brand. For best results, avoid overmixing the batter and follow the flour blend manufacturer’s guidance if additional xanthan gum is needed.
