Ingredients

Garlic Scalloped Sweet Potatoes

  • 1 tsp cornstarch
  • 1 1/2 c heavy cream
  • 1/2 c butter
  • 5 cloves garlic minced
  • 1 tbsp fresh thyme
  • 3 lb sweet potatoes peeled and sliced 1/8-inch thick
  • 1/3 c Parmesan cheese freshly grated
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • Butter or nonstick spray for greasing the baking dish

Instructions

Preheat the oven.

  • Preheat the oven to 375°F.

Prepare the baking dish.

  • Grease a 9x13-inch baking dish with butter or nonstick spray. Set aside.

Prepare the cream mixture.

  • In a small saucepan, whisk the cornstarch into the heavy cream until smooth.

Add the aromatics.

  • Place the saucepan over medium-low heat. Add the butter, minced garlic, fresh thyme, kosher salt, and freshly ground black pepper.

Heat the cream mixture.

  • Cook for 3 to 5 minutes, stirring occasionally, until the butter is melted and the cream is hot. Do not allow the mixture to boil.

Remove from heat.

  • Remove the saucepan from the heat and set the cream mixture aside.

Arrange the sweet potatoes.

  • Place the peeled and thinly sliced sweet potatoes evenly in the prepared baking dish.

Add the cream sauce.

  • Pour the warm garlic cream mixture over the sweet potato slices, distributing it as evenly as possible.

Bake the sweet potatoes.

  • Transfer the baking dish to the preheated oven and bake for 30 minutes.

Add the Parmesan cheese.

  • Remove the baking dish from the oven and sprinkle the freshly grated Parmesan cheese evenly over the top.

Finish baking.

  • Return the dish to the oven and bake for approximately 10 minutes more, or until the Parmesan cheese is melted and the sweet potatoes are tender.

Rest before serving.

  • Allow the dish to rest for several minutes before serving so the cream sauce can settle slightly.

Serve.

  • Serve warm as a savory side dish.
