Ingredients

  • 5 lb NY strip steak sliced into strips
  • 1 tbsp olive oil
  • 1 lb baby golden potatoes quartered or halved
  • 2 tbsp unsalted butter divided
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 cloves garlic minced
  • Salt to taste
  • Ground black pepper to taste

Instructions

  • Place a large skillet over medium-high heat.
  • Add the olive oil and 1 tablespoon of unsalted butter to the skillet.
  • Allow the butter to melt completely and combine with the olive oil.
  • Add the halved or quartered baby golden potatoes to the skillet.
  • Season the potatoes with oregano, thyme, rosemary, salt, and ground black pepper.
  • Cook the potatoes for 3 to 5 minutes, stirring frequently, until they are fork tender.
  • Remove the cooked potatoes from the skillet and transfer them to a plate or bowl.
  • Add the remaining 1 tablespoon of unsalted butter to the same skillet.
  • Allow the butter to melt over medium-high heat.
  • Add the sliced NY strip steak to the skillet.
  • Cook the steak strips, stirring only occasionally, until browned and cooked to the desired level of doneness.
  • Add the minced garlic to the skillet and stir briefly until fragrant, being careful not to burn the garlic.
  • Return the cooked potatoes to the skillet with the steak.
  • Stir gently to combine the steak, potatoes, garlic, butter, and herbs.
  • Continue cooking for 1 to 2 minutes, or until the potatoes are reheated.
  • Taste and adjust the seasoning with additional salt and ground black pepper, if needed.
  • Remove the skillet from the heat.
  • Serve warm.
