Add the sliced NY strip steak to the skillet.
Cook the steak strips, stirring only occasionally, until browned and cooked to the desired level of doneness.
Add the minced garlic to the skillet and stir briefly until fragrant, being careful not to burn the garlic.
Return the cooked potatoes to the skillet with the steak.
Stir gently to combine the steak, potatoes, garlic, butter, and herbs.
Continue cooking for 1 to 2 minutes, or until the potatoes are reheated.
Taste and adjust the seasoning with additional salt and ground black pepper, if needed.
Remove the skillet from the heat.
Serve warm.
